  30 Week Pregnancy Update I can't believe that I've already reached by thirtieth week of pregnancy! This pregnancy has truly flown by. It's hard to believe that in two months we will be snuggling a new baby! At my 28 week appointment we scheduled my c-section for June 14th at 1:30PM. I  really  hoping that time will get bumped up so I don't have to wait at home in anticipation that morning.  Nesting The last few months have been filled with lots of nesting projects and lists. The baby's nursery is just about finished! We need to hang up some wall art, and my dad is making some bookshelves for the wall. Once those things are finished the nursery will be complete.  Nursing/Diaper baskets are prepped and placed around the house. They are filled with diapers, wipes, ointment, breast pads - all the things. :) These were so nice to have during postpartum with Sammy so I didn't have to go up and down the stairs for every diaper change.  Dustin has remodeled the m...

Butterscotch, Banana and PB Muffins

  Butterscotch, Banana and PB Muffins Prep: 10 minutes    Baking Time: 15-18 minutes    Serves: 15 muffins     I needed a way to use up some over-ripe bananas, and was on the hunt for a recipe that didn't make a mushy muffin. Banana muffins typically don't have a ton of texture, and can get pretty soggy after the first day or so. This is a dense muffin recipe packed with peanut butter flavor and the butterscotch chips add a welcome sweetness and crunch. It's a nice change of pace from a typical banana muffin! The peanut butter loving boys at my house were in HEAVEN! If you don't have butterscotch chips on hand you could certainly substitute semi-sweet chocolate chips, or even white chocolate chips would be yummy.  I enjoyed one as an afternoon snack with a La Croix - delightful!  Ingredients:  1/4 cup butter, melted  3/4 cup granulated sugar  1 egg  2 ripe banans 1 tsp vanilla extract  1 cup smooth peanut butter...

6 Things about Sammy John

  Today I am sharing six things about our boy, Sammy John. He's been at such a fun age lately and I wanted to make sure that I write these memories down so I won't forget them. :) His Contagious Joy This boy has the most contagious joy and smile. Anywhere we go he goes BIG. He skips into the grocery store, and is generally a really good natured little guy. Sammy generally enjoys all things - from preschool to childcare to being at home with me.  His love of food  We cannot keep this boy's belly full! He wakes up and says "my belly is down it needs food." Some of his favorite things to eat are dry cereal, fresh strawberries (we buy at least 3 packages a week), chicken nuggets, "sauce" pizza, and mini pancakes - which he calls baby pancakes. He has a sweet tooth like his mama, and after dinner he'll say "I need a special treat." Who am I to deny him?! Honey Mustard Chicken

  Honey Mustard Chicken  Serves: 3-5     Prep Time: 5 minutes      Cook Time: 15-20 minutes Yesterday was one of those warm January days that makes you think that Spring has to be drawing near. To celebrate weather above the freezing point, I switched my dinner plans and had Dustin grill our chicken rather than bake it in the oven. We like to serve this chicken with some BBQ sauce for dipping, because we can't seem to have anything without a dip. :) Enjoy!  Ingredients:  3 lean chicken breasts  1/3 cup honey  1/2 cup dijon mustard  Salt & Pepper  Directions:  1. In a large gallon bag, place chicken breasts, followed by the dijon mustard, honey, and salt and pepper to taste.  2. Seal the bag and use your hands to massage the ingredients together.  3.      Baby #2 is a...     Over winter break Dustin, Sammy and I went to a little ultrasound boutique called "This Little Piggy" in Altoona. The woman owning the shop specializes in 3D/4D ultrasounds and early gender detection. Dustin and I went there during my pregnancy with Sammy twice: once to find our the gender and another time for a 3D/4D ultrasound. It's such a fun experience! We knew we wanted to go back with this pregnancy.  I have been feeling pretty good this pregnancy, aside from the typical pregnancy fatigue. I was really sick during my first pregnancy so I was certain that this baby had to be a different gender. I was definitely mistaken, because we are expecting.... ANOTHER BOY!  I was initially super shocked, but now I can't imagine a different outcome. I'm so excited for Sammy to have a brother to grow up with, and I'm looking forward to a future of washing sports uniforms. :)

Runzas

  Runzas Serves: 6-8         Prep Time: 1 hour Several years ago over Christmas my Aunt Becky visited us, and we tried to recreate a dish that her mom, my grandma, used to make. Nana called this dish a "runza."  It's a pastry filled with ground beef, cabbage, onions, and some seasonings. It's become a tradition in our house that I make this dish during the week that follows Christmas and New Years. It's a little more time consuming to make, but makes plenty of runzas to enjoy for several days, or they freeze very well. It's kind of like an upscale hot pocket. :) Ingredients:  2 boxes of Pillsbury Hot Rolls Mix, prepared as directed  1lb lean ground beef 1/4 cabbage, shredded finely 1 white onion, diced 1 clove minced garlic  1 tablespoon Worcestershire sauce  1 tsp dijon mustard  Salt and Pepper to taste Directions:  1.
