Sheet Pan Dinner

Here's an easy dinner idea for you that requires only 6 ingredients. Perfect for an easy weeknight meal!  Italian Sausage Sheet Pan Dinner Serves: 4 Ingredients:  1 package of Italian Chicken Sausages 1 bag of frozen green beans 1 bag of Trader Joe's frozen sweet potato gnocchi  Olive Oil, salt and pepper, and garlic powder Directions:  Preheat your oven to 375 degrees, and get a sheet pan ready.  Slice up your chicken sausages and set on sheet tray.  Then, dump out your green beans and sweet potato gnocchi on the sheet tray.  Drizzle the chicken sausages and green beans with olive oil, and season with salt/pepper and garlic powder.  Place in the oven and cook for about 20 minutes, stirring halfway through.  That's it! An easy dinner with minimal dishes. 😊 Here's a little "before" picture. We were too busy to snap an "after" picture. Haha!

What's Up Wednesday [February 2024]

And just like that, February is over. Can you even believe it?! I'm linking up with  Sheaffer  and  Shay  to share a little bit about "what's up" in my life right now. What we're eating this week... Sunday - We grilled burgers Monday - We grilled up chicken and onions, and sliced it all up for some chicken and onion sliders.  Tuesday - I had a hair appointment, so we enjoyed leftovers from the night before.  Wednesday - Tonight we're having ham balls and green beans Thursday - I've got some chicken Italian sausages that I'll roast, alongside some sweet potato gnocchi Friday - It's Lent, so we have some fish from the Freezer section at Trader Joe's that we'll cook up.  This past weekend I made a batch of Ramen Salad , and I've been enjoying it for lunches this week. Ramen Salad

This recipe is definitely on rotation during the warmer months. It comes together in a flash, and the leftovers keep really well in the fridge for lunches throughout the week. It's also a great side dish to take to a potluck!  Ramen Salad Serves: 8-10 Ingredients: 1 package of broccoli slaw mix  1/2 red onion, diced finely 1 bag of frozen corn, thawed 1 bag of frozen peas. thawed  3 bags of Ramen Noodles, chicken flavored 1/3 cup avocado oil  1/2 cup white sugar 1/2 cup apple cider vinegar Directions: In a large microwave safe cup, mix together your avocado oil, sugar, apple cider vinegar, and the 3 seasoning packets from the Ramen Noodles. Microwave for one minute, mix and set aside. In  a large mixing bowl, dump your broccoli slaw mix, and use a pair of kitchen shears to cut it up into smaller pieces.  Then, add in your onion, corn and peas. Stir to combine.  Lastly, break your Ramen Noodles into smaller pieces and dump into the bowl. Top with the dressing and mix well.  This sal

Friday Favorites [2-23-24]

  Hello Friday, it's nice to see you. 😊 As usual, I'm linking up with  Erika  and  Andrea  to share some favorites from my week. Let's go!  Are you even from the Midwest if you don't mention this GLORIOUS weather we've had this week? It has been so nice out! It's been lovely to have the windows open for fresh air, and to go on walks and not be entirely freezing.  Jack hit a milestone this week: riding in the stroller without the infant seat attachment. He couldn't have been happier! His legs kicked the entire walk. 😊 Oreos for an after school snack are ALWAYS a favorite in my book.  Easy Trader Joe's meals were saving my life this week. This week hasn't been busy, but Dustin was late coming home several evenings. It was so nice to just have quick meals that I could prepare in a few steps, and with a baby on my hip. Day in the Life: After School Edition

It's Friday Eve! Today I am sharing a little "Day in the Life" but with an after-school twist. I recorded our day following my leaving school at 3:30. I love to read these posts on other lifestyle blogs, so I'm sharing my own here. 😊 At 3:30 on the nose, I left my classroom for the day. I try to leave at exactly 3:30 every day, unless I have a meeting because... of this. 😊 I had the boys from childcare, and we were back home by 3:50.  At this point of the day it's a little chaotic for about 30 minutes. Both boys need a snack (cookies for Sammy, milky for Jack), bottles need washed, and breastmilk needs stored. I call these chores my "milk maid" duties. 😅 After this, we decided to head out for a little walk in our neighborhood. It's been very unseasonably warm in Iowa, so we have to soak it in. Jack rode in his stroller while Sammy drove his scooter, and we walked about 1.5 miles. This walk was exciting because it was the first time we didn't u

5 "Happy" Things

It's Wednesday already! Yesterday as I was driving to work the sun was starting to come up and it MADE ME SO HAPPY. After a winter of driving to work in the dark, it started my day off on the right foot. It also inspired today's post - 5 of my favorite "Happy" things. 😊 #1  Packages. It could be a package containing toothpaste, or it could be a package containing a new outfit. I love getting a package in the mail. 😊 #2 Music. Growing up my dad always had music playing in the car or in the garage while he worked. I love a really great playlist, and how it can elevate everyday life.  #3 Beverages out. Anything from a fountain Diet Pepsi to an iced coffee, I am convinced taste better "out." Whenever I stop to get one, it instantly makes my day a little bit better.  #4 A workout followed by a shower. More long weekends, please

We had the best long weekend! But it has me feeling a bit like this: I LOVE Mondays...like I think they are my favorite day of the week. But this Tuesday feels like a Monday, but that only means Friday will be here sooner, right? It was so nice to have an extra day off. We didn't do anything special this weekend, but I loved having an extra day at home. We played, we went to Trader Joe's, ALL the laundry in the house is done (for now 😅) and it was warm enough for some walks.  This picture made me smile...just a boy and his dog.  Have a great Tuesday! Friday Favorites

Happy Friday! I've got a long weekend on tap, Dustin is off this weekend, and I couldn't be more excited for 3 days at home with my people. I'm linking up with  Erika  and  Andrea  to share some favorites from my week. Here we go!  My first favorite is this new toothy smile. Sammy lost his first tooth! He pulled it out himself and couldn't have been more proud. 😊 How do kids look instantly so much older once their teeth start falling out?! Another favorite HAS to be my two tiniest valentines. We like to get the boys a little something for Valentine's Day to make the day special. 😉 Even though our day was busy with school, we tried our best to celebrate! My day at school was nutty, as are party days. Sammy went through my valentines and I died when I saw what one little friend wrote on my card. Those of you who can read first grade will see it's from a "secret admirer." SO PRECIOUS! I told Dustin that he has some competition. 😉 This picture is a new
