Happy What's Up Wednesday! It's the last Wednesday of the month, which means I'm linking up with Shay and Sheaffer to share a little bit about what's up in my world. Here we go!
What we're eating this week
Sunday - we had pot roast, roasted potatoes and asparagus
Monday - Dustin and I had to attend the School Board Meeting, so we grabbed some Taco John's afterwards.
Tuesday - We grilled brats and had pasta salad
Wednesday - Crockpot BBQ Chicken is cooking away for us to eat tonight! We'll shred up the chicken and serve it with some steamed broccoli.
Thursday - Ham Balls and green beans
Friday - Something meat free for Good Friday 😊
And oh my word...
It was heavenly with a little Kerrygold Butter and a drizzle of honey. 😋 I think that my summer is going to be filled with lots of sourdough making.
What I'm reminiscing about
Jack turns 10 months old on April 1st, and I'm feeling so emotional about it. I can't believe he is so close to turning one!
I keep thinking back to this time last year. It was filled with finishing the nursery and lots and lots of nesting. I think those last few months of pregnancy are so special, and filled with such anticipation! I kinda miss that big 'ol belly, but I don't miss the middle of the night bathroom breaks and heartburn. Haha.
What I'm loving
I'm loving that next month is April. If you're a teacher, you know that the final quarter of the school year absolutely flies! Before we know it, it will be summer time and I'll be home with my sweet babes.
I'm also loving the LMNT Electrolytes. I've been a Sugar-Free Liquid IV drinker for awhile, but I was influenced to try the LMNT brand. Overall, LMNT is a lot cleaner of a brand. I was worried it would be too salty, but I've decided I love it! So far my favorite is the Citrus Salt flavor. I'd compare it to drinking a slightly salty Orange Hi-C.
What we've been up to
We had Spring break this month, and we enjoyed it! We did a day trip and took the boys to the Omaha Zoo.
Sammy loved seeing all the animals, and Jack was so happy to sit in his stroller and observe. I had never been to the Omaha Zoo before. Some of the exhibits were closed due to it being too cold still, so I think we'll head back over the summer for another trip.
March was also a big month as we had a long-awaited allergist appointment for Jack. He was diagnosed with FPIES (Food Protein Intolerance Enterocolitis Syndrome). He is allergic to oats and rice, which we had predicted following some reactions he had. The great news is that many children outgrow FPIES by age 2, so we're almost halfway there. I shared a bit about Jack's diagnosis here if you'd like to read more about it.
What I'm dreading
What I'm excited about
I am so excited for Easter this weekend, and I'm so excited to get my hands in the dirt and start our garden! Last year our garden didn't amount to much, since we had a newborn. I'm ready for all the fresh produce and time spent outdoors. What I'm watching and reading
Dustin and I have been watching "This is Us" on Netflix in the evenings. I love.love.love. this show! As far as reading goes...I'm in a rut. I read "The Women" by Kristin Hannah in March, but I need a really light book next. I'll take any and all suggestions!
What I'm wearing
Hmmm. I'm really bad at documenting what I'm wearing, but I'm really good at documenting what my kids are wearing. 😂 Does this sound familiar to any other mamas?
Here's a little funny I found on Instagram for the other mamas that also have a hard time buying clothes for themselves. It's a goal for me to improve on that. 😉
What I'm doing this weekend
My Aunt Becky is coming to town this weekend to celebrate Easter! We plan to dye Easter eggs and make a bunny cake. Here's sweet Sammy with the bunny cake we made last year. I think he enjoyed eating the decorations and the frosting the best. 😉
What I'm looking forward to next month
April Fool's Day is one of my VERY favorite days to be a teacher. I've done some really fun pranks on my students in the years past, and I have a really funny one up my sleeve for this year. It's all in good fun! One of my most famous pranks was a flood drill. I had the kids take off their shoes and socks and sit on their desks. I still have old students pass me in the hallway and say, "Remember our flood drill prank?!" It was so funny!
