What's Up Wednesday [February 2024]

And just like that, February is over. Can you even believe it?! I'm linking up with Sheaffer and Shay to share a little bit about "what's up" in my life right now.

What we're eating this week...

Sunday - We grilled burgers
Monday - We grilled up chicken and onions, and sliced it all up for some chicken and onion sliders. 
Tuesday - I had a hair appointment, so we enjoyed leftovers from the night before. 
Wednesday - Tonight we're having ham balls and green beans
Thursday - I've got some chicken Italian sausages that I'll roast, alongside some sweet potato gnocchi
Friday - It's Lent, so we have some fish from the Freezer section at Trader Joe's that we'll cook up. 


This past weekend I made a batch of Ramen Salad, and I've been enjoying it for lunches this week. It is so yummy! 

What I'm reminiscing about...

I cannot believe that Jackson is going to be 9 months old on March 1st. It's so crazy to think that this was my belly 9 months ago...


...and here we are today. 

What I'm loving...


This sounds silly, but I am really loving this mouthwash. My breath is minty and I feel like it's helping to strengthen my enamel. That or I'm just a sucker for the cute coloring on the bottle. Haha. 


I'm also loving this lip butter balm. It's been living on my desk at school and I use it daily! 

What we've been up to...

In the month of February we had lots of fun celebrating Valentine's day, and we've been really enjoying the mild temperatures!


Sammy LOVED his Bluey Valentine's Day box. 


& Jack has been enjoying the walks. 


We've also been very busy chasing this one down as he learned how to army crawl. He's gotten so fast! 


The tooth fairy was also busy visiting our house. ๐Ÿ˜‰

What I'm excited about...


I am SO excited for Spring Break! We have nothing exciting planned, but Dustin is off with us. We have a few projects to complete around the house, as well as some spring cleaning. Hopefully the weather cooperates and we can enjoy some time outside! 

What I'm watching/reading...


This month I read "Outlive" and "The Frozen River."Currently, I'm working on "The Women".


What I'm listening to...


Bring on summer, I'm ready for it. ๐Ÿ˜‰

What I'm doing this weekend...

Parent/Teacher conference week is upon us next week, so I plan to do my best to relax in preparation. I'll do all the things on Saturday so on Sunday I can focus on spending time with the boys. I always miss them extra during the long conference days! 

What I'm looking forward to this month...



Is it silly to be excited for St. Patrick's Day? Because I'm very excited. ๐Ÿ˜Š We'll start the day with some green pancakes, and I've got some shenanigans in store for the boys. I love making the holidays special for them!

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. ๐Ÿ˜‰ We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. ๐Ÿ˜‰ He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
