Spaghetti Salad

I've got a tasty little recipe for your next potluck. My mom often made this in the summer months, and now my family loves to enjoy it as well. The key ingredient: Salad Supreme. I've got no idea what's in this jar, but it adds a yummy little texture and crunch that makes the salad extra yummy. It's a little tricky to find in stores, so we always buy it on  Amazon . Yum! Spaghetti Salad Serves: 8-10 Ingredients:  1 box of spaghetti (I like to use whole wheat noodles)  1 cup of cherry tomatoes, halved 1 green pepper, diced 1/2 red onion, diced finely 3 stalks of celery, diced finely 1/2 (give or take) bottle Kraft Zesty Italian dressing Salad Supreme seasoning, to taste  Directions:  Bring a large pot of water to boil, and cook your spaghetti noodles until they are al dente.  Place all of your chopped veggies in a large bowl, and add cooked noodles.  Mix in Italian Dressing until all noodles and vegetables are covered.  Top with a generous sprinkli...

St. Patrick's Day Fun

Hello, Monday!  I counted and there are about 10 Mondays left until this teacher will be on summer break. I love my job as a teacher, but I also really  love summer break. So...the countdown is on. 😉 St. Patrick's Day was yesterday and it was a LONG AWAITED holiday at our house. Sammy had set a leprechaun trap and was hoping to catch one, but the leprechaun was a little too sneaky for him.  Here's some pictures of the fun and malarky:  That sneaky leprechaun made our toilet water GREEN and left footprints on the seat!  Green pancakes are a St. Patrick's Day tradition. 😉 Our leprechaun left us a little note and some chocolate coins.  Green streamers and balloons were everywhere! And here's a little video of my littlest good luck charm and his biggest laugh.  Being a mom and making these memories brings me such joy. It was a fun morning!

Friday Favorites [3-15-2024]

Happy Friday! I CAN'T BELIEVE Spring Break is over! Spring Break landed early this year, but I know that summer break will be here before we know it.  I'm linking up with  Andrea  and  Erika  to share some favorites from the week. Here we go! Quite honestly, this has been one of the BEST parts about Spring Break. Dustin has been off this week so we've been letting the kids be our alarm clock. 😉 We've been taking turns sleeping in (and by sleeping in, I mean like 7:30AM haha) so we've gotten some really nice rest this week. You don't realize how tired and run down you are until you get a chance to get some good sleep!  Our highlight from the week was our trip on Wednesday to the Omaha Zoo. We left on Wednesday morning, and it took a little over two hours to get there. We just did a day trip and it was a full day!  We loved seeing all of the animals.  Sammy loved the aquarium the best.  And Jack loved the penguins. He would track them with his...

First Catch of the Season

Sammy and Dustin have been fishing several times so far this year and haven't had any luck.  Until today. 😊 Sammy was so proud to catch (and release!) his first fish of the season.  Happy Wednesday!

Hawaiian Chicken

One of my very favorite parts of the warmer months is...dinner on the grill. I love how the food is lighter, and my very favorite part is how easy the clean-up is! This same dish could be made in the oven on a sheet tray, but it tasted especially nice on the grill. We ate it up! Hawaiian Chicken Serves: 4 Ingredients: 2 boneless skinless chicken breasts, cut into pieces 1 yellow and 1 red pepper, cut into pieces 1 medium sized red onion, cut into pieces 1 small can of pineapple chunks, juices reserved 1/4 cup rice wine vinegar 1/8 cup soy sauce, plus 2 tablespoons 1 tablespoon garlic, minced 1/2 cup ketchup 2 heaping tablespoons brown sugar Extra Virgin Olive oil Salt and Pepper to taste White rice for serving Directions: Place the chicken, red/yellow pepper, and red onion in a large bowl.  Drizzle with olive oil and 2 tablespoons of soy sauce, plus some pineapple juice. Season with salt and pepper. (At this point, you could grill immediately, or let things marinate a while). ...

Happy, happy Monday! We are on Spring Break and had such a good weekend together. Luckily our weather forecast got the memo about spring break and is behaving accordingly. 😉  I'm sharing our dinner line-up for the week for those in need of a little inspiration:  Sunday - we had steak, salad, and some pasta from Trader Joe's  Monday - Hawaiian Chicken on the grill  Tuesday - Pizza Burgers Wednesday - we're heading to the Omaha Zoo this day, so we'll probably eat out! Thursday - Pork Chops and veggies on the grill  Friday - Stuffed Pasta shells  Have the best week!  Here's some pictures of some weekend happies. 😊

Friday Favorites [3-8-2024]

  Guys...we made it. This has been a LONG WEEK! Dustin left early morning on Monday and has been gone the entire week at a training. That in of itself is challenging, but throw parent-teacher conference week on top of it? It's been a long one, and I couldn't be happier for Spring Break to finally get here. 😊 As usual I'm linking up with  Andrea  and  Erika  to share some favorites from my week.  My first favorite... ...is this. Ahhh. Spring Break feels pretty nice for this tired first grade teacher. We don't have much of anything planned, but the weather looks to be nice, and I'm excited to spend time with my people.  And since it's Spring Break t hat has to mean that Summer won't be too far behind.
