One of my very favorite parts of the warmer months is...dinner on the grill. I love how the food is lighter, and my very favorite part is how easy the clean-up is! This same dish could be made in the oven on a sheet tray, but it tasted especially nice on the grill. We ate it up!
Hawaiian Chicken
Serves: 4
Ingredients:
2 boneless skinless chicken breasts, cut into pieces
1 yellow and 1 red pepper, cut into pieces
1 medium sized red onion, cut into pieces
1 small can of pineapple chunks, juices reserved
1/4 cup rice wine vinegar
1/8 cup soy sauce, plus 2 tablespoons
1 tablespoon garlic, minced
1/2 cup ketchup
2 heaping tablespoons brown sugar
Extra Virgin Olive oil
Salt and Pepper to taste
White rice for serving
Directions:
- Place the chicken, red/yellow pepper, and red onion in a large bowl.
- Drizzle with olive oil and 2 tablespoons of soy sauce, plus some pineapple juice. Season with salt and pepper. (At this point, you could grill immediately, or let things marinate a while).
- We used a large grill basket and grilled until the chicken was completely cooked. Add the pineapple chunks the final 3-5 minutes of cooking.
- Meanwhile, mix the ketchup, remaining soy sauce, rice wine vinegar, garlic and brown sugar together. Set aside.
- When ready to eat, place a scoop of white rice on your plate. Top with the chicken, peppers and onion mixture. Drizzle with sauce.
- Enjoy. 😀
