Hawaiian Chicken

One of my very favorite parts of the warmer months is...dinner on the grill. I love how the food is lighter, and my very favorite part is how easy the clean-up is! This same dish could be made in the oven on a sheet tray, but it tasted especially nice on the grill. We ate it up!


Hawaiian Chicken

Serves: 4

Ingredients:

2 boneless skinless chicken breasts, cut into pieces

1 yellow and 1 red pepper, cut into pieces

1 medium sized red onion, cut into pieces

1 small can of pineapple chunks, juices reserved

1/4 cup rice wine vinegar

1/8 cup soy sauce, plus 2 tablespoons

1 tablespoon garlic, minced

1/2 cup ketchup

2 heaping tablespoons brown sugar

Extra Virgin Olive oil

Salt and Pepper to taste

White rice for serving

Directions:

  1. Place the chicken, red/yellow pepper, and red onion in a large bowl. 
  2. Drizzle with olive oil and 2 tablespoons of soy sauce, plus some pineapple juice. Season with salt and pepper. (At this point, you could grill immediately, or let things marinate a while). 
  3. We used a large grill basket and grilled until the chicken was completely cooked. Add the pineapple chunks the final 3-5 minutes of cooking. 
  4. Meanwhile, mix the ketchup, remaining soy sauce, rice wine vinegar, garlic and brown sugar together. Set aside. 
  5. When ready to eat, place a scoop of white rice on your plate. Top with the chicken, peppers and onion mixture. Drizzle with sauce. 
  6. Enjoy. 😀

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
