Friday Favorites [5-17-2024]

  Yay for Friday! I'm linking up with  Andrea  and  Erika  to share some favorites from this week. Here we go! It's been a busy week in May. I'm not sure where school gets out where you are from, but in Iowa we have about 2 weeks left. These next 2 weeks will be filled with field trips and all the end of school year "stuff" so I am looking forward to a restful weekend!  Last weekend I made the yummiest sourdough bread. I mixed in blueberries and made a "paste" with butter, cinnamon and granulated sugar. Oh my word, a slice of this bread alongside some eggs has been my favorite part of waking up this week.  Look who learned a new trick! On Thursday I placed Jack in his crib and went to make my bed. When I came back he was standing up, looking quite proud of himself. 😉 Sammy has preschool graduation next week, and my heart can't take it! almost there...

  I'm just a teacher in May, which means that... ...this is basically my whole personality these days. 😉 We've got 13 more "wake-ups" + 2 teacher work days ahead of us before it's summer. I am ready! Tuesday morning Jack was fussing as we hurried out the door and it made me so excited to have some slower mornings ahead of us.  In honor of us being in the home stretch, here's a few of my favorite teacher funnies... That's it for today. If you're a teacher, I hope you got a chuckle. If you aren't a teacher, you should find a teacher and tell them thank-you. 😂 See you tomorrow! 

Life lately.

I wrote the date on the whiteboard at school, and couldn't believe that May is (nearly) halfway over! In some ways it feels like May will last forever, but in other ways, it seems like this school year has flown since returning from maternity leave in September. I figured it was time for another "life lately" to share a bit about what's going on in our life.  The days of preschool are dwindling down for the year for Sammy, and I am finding myself feeling pretty emotional about it. I'm not sure that I want this chapter to be closed! He is seeming so grown up these days. This picture is from the beginning of the shcool year, and I think he's grown 2 inches since then.  Sammy is excited about summer, but I know he'll miss his preschool friends and childcare friends. He shares that he's excited to be at home with me over the summer, and I'm excited for that too. He's been very into Spiderman lately, and I love it. Haha.  Sammy starts t-ball tonight

Mother's Day fun

Happy, happy Monday! You know those weekends when you crawl into bed on Sunday night and feel satisfied and rejuvenated from your days off? That's exactly the feeling I'm having right now. 😊 We had such a lovely weekend together! On Saturday we did all the things  so that on Sunday we could play. We cleaned, got the garden planted, and laundry finished.  On Sunday, we woke up and headed to church. After church we went to a local orchard that was putting on "Baby Animal" days during the month of May. This is the same orchard that we visit in the fall. It's one of our favorite places! They had some of the "normal" orchard things open, like the corn pit. I truly think Sammy would have stayed in the corn pit if we had let him! There were baby bunnies and kitties to hold, and baby chicks and ducks to watch. The weather couldn't have been better! There is also a train to ride, which is always a favorite. I love this picture. Friday Favorites [5-10-2024]

  It's Friday and I couldn't be anymore excited about the upcoming weekend! I'm linking up with  Andrea  and  Erika  to share some of my Friday Favorites from the week. Settle in, I've got lots of them this week!  This week was Teacher Appreciation week, and we were spoiled by our PTA. There were an abundance of treats and drinks all week long! My favorite little gift came from one of my students. It was this cute basket filled with all of my favorite things...so thoughtful! It was Grandparents Day at Sammy's preschool on Monday. He was such a lucky little boy to have both sets of grandparents there with him!  I snapped this picture of my boys before we went to church on Saturday night. We love an opportunity to match, especially when Bluey is involved. 😉 On Sunday my dad filled a raised garden bed for us, and it involved moving around some dirt. Sammy couldn't have been more thrilled. He ran up to the door and made me admire his worm. Look at that smile! You c

Egg Roll in a Bowl

Today I'm sharing a very  easy dinner recipe that Dustin and I really enjoy. It's low carb, high protein and extra delicious. The best part is that it only takes one pan and a few minutes to pull together. Here's the recipe! Egg Roll in a Bowl Serves: 4+ Ingredients: 1 lb of pork sausage 1 bag of Cole Slaw mix (I end up using about 2/3 of the bag) 1/2 red onion, diced finely 1 tablespoon of minced garlic 1/8 cup of soy sauce (we like low sodium)  pepper  Optional - rice and green onion Directions: Start browning up your sausage in a large skillet, crumbling into small pieces.  When your sausage is nearly cooked, mixed in your bag of cole slaw mix.  Then, add in your onion, garlic and pepper.  When the vegetables are softened, add in your soy sauce. Mix things around, and you're all set! To serve, top with green onion. Sometimes we serve this over rice if we need a heartier meal.

Yesterday we walked in the house after school and Sammy declared, "it's the weekend!"  Nobody was sorrier than me to tell him that that wasn't the case. 😉 Monday night/Tuesday morning we had a bad storm and were in the basement for about an hour around 2AM. It was a struggle to get the kids back asleep following the sirens and unplanned wake-up.  Then on Tuesday my class at school had a field trip. It has been a *start* to the week. I'll be back here tomorrow!
