Life Lately [March 2025]

I'm a little out of practice on my blog, [it's been since our Disney World recaps!], but I'm back and excited to share a little bit about what life looks like lately for the Brisel family. 

Somehow I blinked and all of a sudden...



it's March. I'm not entirely certain how that happened, since Christmas was just last week...right? Spring break is just around the corner and I can't wait. After spring break the rest of the school year seems to fly - summer approaching makes me so excited as a teacher, but also so sad to say goodbye to Sammy's kindergarten year. Time is going too quickly!

Here's a little bit of life lately:

Sammy is growing and growing and growing - and his appetite matches the pattern! I just had to buy him a second round of winter clothing because he outgrew the first round. I'm ready for summer and shorts and not needing to worry about blown out knees on his pants, and them being too short. 

He is learning so much at school. He's able to read decodable passages and his confidence seems to be growing every day. There were several weeks of too-cold weather that meant he had inside recess, and I know he's been so happy to be playing out at recess now that the weather (appears) to have turned. 😉


Each Wednesday he has religious education and is taught by my mom. He came home on Wednesday and said that he was so excited to get "lashes" on his head on Wednesday. Sammy also decided for lent that he is going to work on hanging up his backpack each day and add in an "Our Father" to his bedtime prayers. 

It took until February for a real snowstorm, but he LOVED playing in the snow this winter. He built this snowman which promptly melted the next day. Haha. 

This time last year, we were in the trenches with Jack's FPIES diagnosis. We were at a standstill - his only safe foods being breastmilk, strawberries and broccoli. 

Needless to say, I am so glad we are on the other side of his diagnosis. 😊 He is able to eat such a variety of foods - his favorite being muffins. At this point I am making two batches of muffins a week! Jack calls them "pah-pahs" and has one for breakfast each day. His favorites are banana muffins and pumpkin muffins. 

Jack is talking like crazy. Each day he imitates us and tries to say a new phrase. He can very easily put 2 words together, and is starting to string together 3-4 word phrases. Jack saw a picture of the Walt Disney World castle and said "wanna go!" Me too, buddy. 😉

Dustin and I are just continuing with our jobs, and are getting excited for spring break and summer. During the summer we LOVE Dustin's work schedule, and are excited for his four "off" days as a family. We're ready to get our garden going, and spend more time together outside.

I'm so excited to share that our family is celebrating the holiday season at our very favorite place...Disney World! This trip has been a long time coming. Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
