Burrito Bowls

This isn't much of a recipe, just more of an easy idea for dinner. We took a couple of different ingredients and mixed them together to get a Chipotle inspired burrito bowl. Here's what we did!

Burrito Bowls

Serves: 4-5

Ingredients:

2 boneless skinless chicken breasts

1 package taco seasoning 

2 tablespoons avocado or olive oil

Cooked white rice 

Pico de Gallo 

Chopped lettuce

Chopped red onion

Shredded cheddar cheese

Sour cream

*We didn't use these because we didn't have them on hand, but we agreed that avocado, black beans, corn, and Chick Fil A's Avocado Ranch dressing would have taken these to the next level. 

Directions:

  1. A few hours before preparing your meal, season your chicken breasts with about 1/2 of a package of taco seasoning and avocado/olive oil, using a large ziploc bag. When you're ready for dinner, grill your chicken until cooked through, and then cut into bite sized pieces. 
  2. Layer your rice, chicken, and whatever "fixings" you enjoy to a bowl. 
  3. That's it! Enjoy. 😊
