Back to School "Brinner"

I've seen many bloggers have a "Back to School Brinner" the evening before school starts as a way to celebrate and send-off their school aged children. With Sammy entering his final year of preschool, this  year seemed like the perfect time to start a new tradition!

I love the idea of a Back to School Brinner because: 

1. I'm a teacher, so our mornings don't allow time for a big breakfast. 

2. We're more awake and alert for meaningful conversations vs. being half asleep in the morning. 

3. With Dustin working third shift, he's not home in the morning for our breakfast, so this works best for our schedule.

I ordered a few decorations to make it seem extra special, and set the menu. I was really excited to make this a tradition for our family!

We have breakfast for dinner about twice a month at our house, and it's one of Sammy's favorite meals. The menu was Whole Wheat Chocolate Chip pancakes, bacon (obviously), fruit and eggs. Super easy! 

Sammy thought it was so fun to have a special dinner celebrating him. We tucked him into bed and read The Night Before Preschool before saying goodnight. We're so excited for our big boy!

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
