Salsa Verde Crockpot Chicken

I found this recipe on Pinterest, and tweaked it a bit to fit our family's taste and it turned out great! This will absolutely be in our meal rotation. Who doesn't like a crockpot meal this time of year?!

Salsa Verde Crockpot Chicken

Serves: 4-6

Ingredients: 

1 yellow onion, sliced

2 chicken breasts

1/4 cup chicken stock

1 tablespoon garlic powder

1 teaspoon chili powder 

Salt & Pepper 

1 7oz jar of Salsa Verde 

1 brick of reduced fat cream cheese

1 cup of shredded cheddar cheese

1/3 cup of skim milk 

1 head of broccoli florets, cut into bite sized pieces 

Directions: 

  1. Turn your crockpot to low and make a "bed" of your sliced onions. 
  2. Place the chicken breasts over the top and add in garlic powder, chili powder, salt/pepper, salsa verde and chicken stock. 
  3. Cook on low for about 3-4 hours. 
  4. About 45 minutes before serving, add in the brick of cream cheese and allow it to melt for about 15 minutes. 
  5. About 30 minutes before serving, shred the chicken and stir in the cream cheese. Then, add in the broccoli, shredded cheddar cheese and milk. Stir well, and allow to cook for an additional 30 minutes. 
  6. Mix well again before serving. You could eat this over rice, in a tortilla shell, or even over noodles. We LOVED it!

Friday Favorites [3-1-2024]

Friday Favorites 11-17-2023

How in the world is Thanksgiving next week?! November is absolutely flying by. I'm linking up with  Andrea  and  Erika  to share some favorites from the week! One of my very FAVORITE things in the world happened this weekend. Dustin got off work, stopped at Starbucks and I got a festive morning delivery. It's the best start to my day!  I made a few chicken pot pies over the weekend and stuck one in the freezer. It's always such a good feeling knowing that a homemade meal is prepped and ready to go! You can't beat comfort food this time of year. Speaking of comfort food, have you ever tried a ham ball? We had some for dinner on Sunday with cheesy potatoes. They're a staple meal in Iowa! I shared my recipe  here . Notice my Christmas plate being all festive underneath. 😉 Last weekend was glorious - we had two days with very few plans. It was so nice to be cozy at home! I put Sammy's Christmas sheets on his bed, and he couldn't have been more excited to climb
