Salsa Verde Crockpot Chicken

I found this recipe on Pinterest, and tweaked it a bit to fit our family's taste and it turned out great! This will absolutely be in our meal rotation. Who doesn't like a crockpot meal this time of year?!

Salsa Verde Crockpot Chicken

Serves: 4-6

Ingredients: 

1 yellow onion, sliced

2 chicken breasts

1/4 cup chicken stock

1 tablespoon garlic powder

1 teaspoon chili powder 

Salt & Pepper 

1 7oz jar of Salsa Verde 

1 brick of reduced fat cream cheese

1 cup of shredded cheddar cheese

1/3 cup of skim milk 

1 head of broccoli florets, cut into bite sized pieces 

Directions: 

  1. Turn your crockpot to low and make a "bed" of your sliced onions. 
  2. Place the chicken breasts over the top and add in garlic powder, chili powder, salt/pepper, salsa verde and chicken stock. 
  3. Cook on low for about 3-4 hours. 
  4. About 45 minutes before serving, add in the brick of cream cheese and allow it to melt for about 15 minutes. 
  5. About 30 minutes before serving, shred the chicken and stir in the cream cheese. Then, add in the broccoli, shredded cheddar cheese and milk. Stir well, and allow to cook for an additional 30 minutes. 
  6. Mix well again before serving. You could eat this over rice, in a tortilla shell, or even over noodles. We LOVED it!

Sammy is SEVEN!

  Sammy is SEVEN! Seven years ago we were at the hospital, excited and nervous to meet our Samuel John.  Sammy was always a happy baby and toddler, and that's continued into childhood. He is so affable, friendly, and confident! He loves his family, he loves to play and he loves to be active. Games are his favorite, and he loves to "snuggle."  Since returning back to school, he's developed a huge love of reading! As a first grade teacher this WARMS my heart. He loves most books, but right now he favors graphic novels. He is the best big brother. Without us asking, he is so willing to help his brother. Just yesterday, Jack sneezed and Sammy ran to get him a wipe and then proceeded to wipe Jack's nose for him. If someone gets hurt he often hurries to see what's wrong and if he can help. Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. Haha.  Needless to say, I'm feeling extra perky this Friday.  I'm linking up with Andrea  and  Erika  to share a few favorites from my week. 😊 Sammy's flag football team is the Chiefs, and so obviously his favorite dog supporter needed to get a matching outfit. I stopped by with the boys, and Jack was genuinely surprised to see so many people who looked like his daddy.
