Salsa Verde Crockpot Chicken

I found this recipe on Pinterest, and tweaked it a bit to fit our family's taste and it turned out great! This will absolutely be in our meal rotation. Who doesn't like a crockpot meal this time of year?!

Salsa Verde Crockpot Chicken

Serves: 4-6

Ingredients: 

1 yellow onion, sliced

2 chicken breasts

1/4 cup chicken stock

1 tablespoon garlic powder

1 teaspoon chili powder 

Salt & Pepper 

1 7oz jar of Salsa Verde 

1 brick of reduced fat cream cheese

1 cup of shredded cheddar cheese

1/3 cup of skim milk 

1 head of broccoli florets, cut into bite sized pieces 

Directions: 

  1. Turn your crockpot to low and make a "bed" of your sliced onions. 
  2. Place the chicken breasts over the top and add in garlic powder, chili powder, salt/pepper, salsa verde and chicken stock. 
  3. Cook on low for about 3-4 hours. 
  4. About 45 minutes before serving, add in the brick of cream cheese and allow it to melt for about 15 minutes. 
  5. About 30 minutes before serving, shred the chicken and stir in the cream cheese. Then, add in the broccoli, shredded cheddar cheese and milk. Stir well, and allow to cook for an additional 30 minutes. 
  6. Mix well again before serving. You could eat this over rice, in a tortilla shell, or even over noodles. We LOVED it!

Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. The Brisel family is OFF!

I'm so excited to share that our family is celebrating the holiday season at our very favorite place...Disney World! This trip has been a long time coming. We have been saving and planning for over a year, and yesterday we [yes we...Santa doesn't get credit for this one 😉] surprised our boys with a trip to Disney World for their Christmas gift. Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different.
