What's Up Wednesday [September 2024]


And just like that...it's the last week of the month! Time for What's Up Wednesday with Sheaffer and Shay

What We're Eating this Week...

Fall weather is officially upon us, so I'm craving warm, comforting meals. This week's menu is...

Sunday - Meatloaf and green beans

Monday - Chicken Pot Pie with a green salad

Tuesday - "Smash Burger" tacos 

Wednesday - BBQ Chicken bowls

Thursday - Spaghetti 

Friday - we're grilling up the Trader Joe's Unexpected Cheddar Chicken sausages...so good! 

My boys have been eating a lot of pumpkin muffins this week. I had to make a second batch this evening because Sammy ate 5 (5!) in one day. 

We're basically eating pumpkin in whatever we can these days, which is why I made these pumpkin sourdough discard bagels. A warm bagel + pumpkin cream cheese from Trader Joe's = a little slice of heaven. ๐Ÿ˜Š

What I'm reminiscing about...

As always...this time last year. Look how small and squishy Baby Jack was! 


These days he's quite a bit bigger and A LOT faster. He's earned himself the nickname "Tornado Jack." Haha. 

What I'm loving...


Ugh. I simply cannot get enough of the Pumpkin Cream Cold Brew. Here's the best way to order it (in my opinion): Grande Pumpkin Cream Cold Brew + Extra Ice in a Venti Cup with sugar free vanilla. So delightful. 

What I'm dreading...


September held some pretty big doctor appointments for Jack that had been weighing pretty heavily on us. I'm thrilled those are behind us with a happy report. Time to move onwards!

What I'm excited for...


Boy, oh boy, am I excited for Christmas. ๐Ÿ˜‰ Our Christmas pajamas came in the mail last week, and with great restraint, I packed them away. We have to celebrate Halloween first! 

What I'm watching...


Did anyone else get sucked in to this show like I did?! It premiered the same week that had a few nights Dustin had some evening work hours to work. I happily put Jack and Sammy to bed and curled up in bed to watch it. I love Elin Hilderbrand books and it was so exciting to see an adaptation of one on screen! 

What I'm reading...


I just finished this book from Shay's Book Club over the weekend and LOVED it. It was long, but it made me think. I love when I finish a book and am still thinking about it a few days later. I recommend this one for sure! 

What I'm listening to...

At the moment, the feedback of the baby monitor, the dishwasher washing and the dryer drying. Peacefulness over here. ๐Ÿ˜‰

What I'm wearing...

It is about time I invest in a full-length mirror for our bedroom. Can you believe I don't have one yet? I recently purchased some "fall" outfits and I should take pictures to document. Sounds like a goal for next month's Emilee. Haha. 

What I'm doing this weekend...

It's officially flag football season over here. ๐Ÿ˜Š


I love watching our kids try new things and see how they like them. Sammy basically loves most things, but I think football will be something he does for years to come! He has another game this weekend, and Dustin is off this weekend. I'm hoping maybe we can sneak out to dinner on Saturday. 

What I'm looking forward to next month...



I can't wait to celebrate Sammy's 6th birthday! He turns 6 on October 19th (how?!) and we're celebrating him with his first "friend" birthday party. It's camping themed and I can't wait to see how it comes together. 


I cannot wait for Halloween, either. Look at these sweet boys from last year! This year, they have the CUTEST coordinating costumes that I can't wait to see them in. Our friends come over to trick-or-treat in our neighborhood and it is always so much fun. We can't wait!

I'm so excited to share that our family is celebrating the holiday season at our very favorite place...Disney World! This trip has been a long time coming. Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. ๐Ÿ˜‰ We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. ๐Ÿ˜‰ He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
