Pepper Jack Tacos

'Tis the season for easy weeknight meals. I was inspired to make a remix on a favorite taco recipe, and we ended up loving it! It's a little spicy, but nothing we couldn't handle. If your family is a little sensitive to spice, you can reduce the amount of pepper jack cheese and add in a little cheddar cheese. Easy! Try this recipe this week. 😉


Pepper Jack Tacos

Serves: 4-6

Ingredients:

1lb lean ground beef (I use 93/7)
1/2 package taco seasoning
1/2 cup mild taco sauce
1 cup of shredded pepper jack cheese  
Hard taco shells (I like stand and stuff) 
Green onions, lettuce, sour cream and cheddar cheese to garnish 

Directions:
  1. Preheat your oven to 350 degrees and line a pan with foil. 
  2. In a skillet over medium high heat, begin browning your ground beef, breaking the meat up into small pieces. 
  3. Once your beef is cooked through, add in your 1/2 package of taco seasoning and mild taco sauce. Give things a really good mix until things are incorporated well. 
  4. Next, reduce the heat and stir in the pepper jack cheese until it is melted. 
  5. Scoop a generous spoonful into each taco shell and top with some shredded cheddar cheese, then place on your foil lined pan.
  6. Place your filled taco shells into the oven and cook for 5-8 minutes. You want the taco shells to get toasted and the cheese to melt. Don't skip this step - it's what makes them so delicious! 
  7. Remove from the oven and top with green onion, lettuce and sour cream. That's it! Dinner is served. 😊

Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today! 

Sammy is SEVEN!

  Sammy is SEVEN! Seven years ago we were at the hospital, excited and nervous to meet our Samuel John.  Sammy was always a happy baby and toddler, and that's continued into childhood. He is so affable, friendly, and confident! He loves his family, he loves to play and he loves to be active. Games are his favorite, and he loves to "snuggle."  Since returning back to school, he's developed a huge love of reading! As a first grade teacher this WARMS my heart. He loves most books, but right now he favors graphic novels. He is the best big brother. Without us asking, he is so willing to help his brother. Just yesterday, Jack sneezed and Sammy ran to get him a wipe and then proceeded to wipe Jack's nose for him. If someone gets hurt he often hurries to see what's wrong and if he can help. He's a lot like Dustin in that he loves to have fun and be social. He's a lot like me in that he loves to make lists and know the when/how things are happening. He loves a...

What's Up Wednesday [September 2024]

And just like that...it's the last week of the month! Time for What's Up Wednesday with  Sheaffer  and  Shay .  What We're Eating this Week... Fall weather is officially upon us, so I'm craving warm, comforting meals. This week's menu is... Sunday - Meatloaf and green beans Monday - Chicken Pot Pie with a green salad Tuesday - "Smash Burger" tacos  Wednesday - BBQ Chicken bowls Thursday - Spaghetti  Friday - we're grilling up the Trader Joe's Unexpected Cheddar Chicken sausages...so good!  My boys have been eating a lot of pumpkin muffins this week. I had to make a second batch this evening because Sammy ate 5 (5!) in one day.  We're basically eating pumpkin in whatever we can these days, which is why I made these pumpkin sourdough discard bagels.
