Caprese Pasta

It's Fourth of July Eve! 

Today I'm sharing a yummy little dinner recipe that is able to be assembled and cooked in one pan. (Amen). It's a variation on the viral pasta recipe floating around social media. Give it a try! 

Caprese Pasta

Serves: 4-5 

Ingredients:

1 large boneless skinless chicken breast, cut into small pieces

1 carton of cherry tomatoes, washed

1/2 red onion, diced

1 large bag of tortellini, cooked and drained

Extra Virgin Olive Oil

Minced garlic, Italian seasoning, salt and pepper, fresh mozzarella cheese, parmesan cheese, and balsamic glaze (measure with your heart)

Directions:

  1. The morning before cooking, place your cut up chicken breast in a Ziploc bag with some Extra Virgin Olive Oil, minced garlic, salt and pepper and Italian seasoning. Let marinate in the fridge for at least a few hours. 
  2. In a 9x13 pan, place your marinated chicken breast, minced onion and cherry tomatoes. Mix together and make sure it is all on an even layer. Top with a drizzle of olive oil, plus more garlic, Italian seasoning and salt and pepper. 
  3. Bake in a 350 degree oven until your chicken is cooked through. 
  4. Remove from heat and add in your fresh mozzarella and parmesan cheese. Using the back of your spoon, mash the tomatoes around a bit to make a sauce. Place under the broiler for a few minutes. 
  5. Mix in your cooked tortellini. 
  6. To serve, top with additional parmesan cheese and a drizzle of balsamic glaze. YUM. 

*If you have fresh basil - add some in! 
*You could also use different types of meat, depending on what you have. Italian sausage would be delicious!

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
