Chicken Queso Tacos

This meal came into existence last night when I was trying to get creative with dinner. It's super simple to prep and has minimal ingredients: all good things in my book. 😉

Chicken Queso Tacos

Ingredients:

2 cooked chicken breasts, cut into small pieces (I roasted my chicken in the oven with olive oil, salt and pepper)

1 jar of Tostitos Queso (you'll use about 1/2 a jar)

1 jar of salsa (you'll use about 1/2 a jar)

shredded cheddar cheese

crunchy taco shells 

green onion, sliced 

Directions:

  1. Preheat your oven to 350 degrees, and get out a baking dish.
  2. Mix together your chicken, Tostitos Queso and salsa. Place the dish in the oven for about 20 minutes until things are nice and hot. 
  3. Fill your taco shells with a big spoonful of your chicken mixture, then top with a sprinkling of cheese. 
  4. Bake OR Air Fry your tacos for a few minutes to make the cheese all melted, and the taco shell crispy. 
  5. Top with a few green onion slices and serve it up. YUM!

Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. The Brisel family is OFF!

I'm so excited to share that our family is celebrating the holiday season at our very favorite place...Disney World! This trip has been a long time coming. We have been saving and planning for over a year, and yesterday we [yes we...Santa doesn't get credit for this one 😉] surprised our boys with a trip to Disney World for their Christmas gift. Disney is truly Dustin and my happy place, so we couldn't be more excited to bring the boys!  While we're gone I plan to blog about our trip, so I'm hoping to share an update tomorrow evening. Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different.
