Friday Favorites [3-22-2024]


It's Friday again! This week went by pretty fast, and I can't believe that we're about to see the end of April. Crazy! As usual, I'm linking up with Andrea and Erika to share some Friday Favorites. 




My first favorites have to be from St. Patrick's Day. 😊 Sammy had been looking forward to this day for weeks, and we pulled out all the stops. I recapped it here if you want to read more about the fun. Toilet water was green, pancakes were green...it was just a fun little morning at our home. 💚

Now that it's officially spring, I've changed out menu accordingly. We've been enjoying all the lighter meals that come along with spring and summer. 

This week we had my Spaghetti Salad along some grilled burgers. 


And then we had Honey Mustard Chicken Salads later on in the week. These were extra delicious! 


This week I switched up my workout routine. Typically I do a 20 minute Peloton ride, followed by a 20 minute strength class. This week I did Rebecca Kennedy's 5 day split, and I don't think I've been quite this sore since college dance team. Hahaha. The more research I've done on fitness, the more I'm finding that the emphasis should be on weight training. I loathe "leg" and "butt" days, but I'm trying to push myself. I finish the program tomorrow. I think I'll go back to my normal workout routine next week, but then repeat the program the following week. 


A hot tub party at Grammy and Papa's house is ALWAYS a favorite in Sammy's book. 😉

Another favorite is....this loaf of bread. It took me 9 whole entire days to "revive" my dehydrated sourdough starter, and last weekend it was finally ready, so I made my first loaf. I'm pretty pleased with how it turned out. It was SO GOOD toasted with some butter and honey on it. I'm going to try again this weekend, and I'm excited! I think my summer will be filled with all sorts of sourdough bread making. Haha. 

This was a big week for Jack, as we had a very long-awaited appointment with the allergist. Jack had been struggling with some recurrent vomiting following his consumption of products with rice and oats. He was officially diagnosed with FPIES (Food Protein Induced Enterocolitis Syndrome) on Wednesday. I share a little about his story here. We're happy to have a diagnosis and a plan for our little guy moving forward. 



Have you ever heard of the Nugget Couch? We got it for Sammy for his third birthday, and it's easily one of our most used toys. We brought it upstairs (it typically lives in the basement) last weekend and the boys loved climbing over it and using it as a slide. I love these pictures of Jack climbing it!

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
