I have been a huge fan of granola as a snack these days. I love it sprinkled over some yogurt, or I'll eat it by the handful as a quick snack. I'm a big fan of this recipe! Dried cherries and white chocolate chips add a little bit of something special.
White Chocolate Cherry Granola
Ingredients:
6 cups of old fashioned oats
1 cup of slivered almonds
1 cup of dried cherries
1 cup of white chocolate chips
2 tablespoons cinnamon
1 teaspoon vanilla bean paste, or vanilla extract
1/4 cup + 2 tablespoons maple syrup (use a really good kind!)
1 cup of olive oil
1 stick of butter, melted
Directions:
- Heat your oven to 325 degrees, and get two cookie sheets ready to go.
- In a microwavable bowl, melt your butter. Then, mix in your olive oil, vanilla, maple syrup, cinnamon and vanilla.
- In a large bowl, mix together your oats and almonds. Then top with your butter/olive oil mixture.
- Stir until well combined, and spread out between your cookie sheets.
- Cook for 30-40 minutes, stirring/shaking every 10 minutes.
- Allow granola to totally cool before mixing in your dried cherries and white chocolate chips.
- This will keep really well in a gallon bag, or a tupperware.
