White Chocolate Cherry Granola

I have been a huge fan of granola as a snack these days. I love it sprinkled over some yogurt, or I'll eat it by the handful as a quick snack. I'm a big fan of this recipe! Dried cherries and white chocolate chips add a little bit of something special. 


White Chocolate Cherry Granola

Ingredients: 

6 cups of old fashioned oats

1 cup of slivered almonds

1 cup of dried cherries

1 cup of white chocolate chips

2 tablespoons cinnamon

1 teaspoon vanilla bean paste, or vanilla extract 

1/4 cup + 2 tablespoons maple syrup (use a really good kind!)

1 cup of olive oil

1 stick of butter, melted 

Directions:

  1. Heat your oven to 325 degrees, and get two cookie sheets ready to go. 
  2. In a microwavable bowl, melt your butter. Then, mix in your olive oil, vanilla, maple syrup, cinnamon and vanilla. 
  3. In a large bowl, mix together your oats and almonds. Then top with your butter/olive oil mixture. 
  4. Stir until well combined, and spread out between your cookie sheets. 
  5. Cook for 30-40 minutes, stirring/shaking every 10 minutes. 
  6. Allow granola to totally cool before mixing in your dried cherries and white chocolate chips. 
  7. This will keep really well in a gallon bag, or a tupperware.

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
