Happy Monday! This weekend was made a little sweeter with a slice of this Chocolate Chip Banana Cake. I had a couple of ripe bananas, and I was out of muffin tin liners, so I changed direction and came up with this instead. Yum!
Chocolate Chip Banana Cake
Makes: 1 9x13 pan
Ingredients:
1 yellow cake mix
3 eggs
3/4 cup sour cream
1/2 cup vegetable oil
2 very ripe bananas, mashed
1 tsp vanilla extract
2 tsp cinnamon
1 cup of semisweet chocolate chips
For Frosting:
3/4 stick butter at room temperature
2 oz cream cheese at room temperature
Powdered sugar, about 4 cups
Milk, about 4 tablespoons
1 tsp Vanilla Bean paste (can substitute vanilla extract if desired)
Directions:
- Preheat your oven to 350 degrees, and grease a 9x13 pan with a little cooking spray.
- In a stand mixer fitted with a paddle attachment, beat together your cake mix, oil, eggs and mashed bananas until well combined.
- Then mix in cinnamon and vanilla extract, followed by chocolate chips until they are evenly distributed.
- Spread in your pan, and bake until a toothpick inserted in the middle comes out clean. This will take about 20-25 minutes.
- Allow cake to cool completely, meanwhile...
- Beat your butter and cream cheese until well mixed and fluffy. This may take 1-2 minutes.
- Add in powdered sugar, milk, and vanilla bean paste, and continue mixing until your frosting becomes the desired consistency. Frost your cooled cake, and enjoy. 😊
