Who else loves a hot breakfast? I would bend over backwards to make myself something hot and savory for breakfast, but some mornings I just don't have time to stand over a stove. Enter...freezer breakfast burritos. All it takes is a few ingredients, a little prep time, and you can have a freezer stash of breakfast burritos. I like to use the low carb tortillas to make these just a little healthier.
Here's my method!
The measurements shown make about 16 breakfast burritos.
First, I brown up a pound of ground sausage until it is nice and crumbly. You could certainly use turkey or chicken sausage, or even bacon as a substitute. We just prefer ground sausage at my house.
While the sausage is cooking, crack about a dozen eggs in a large bowl. Add in a big splash of milk (I use 3/4 cup of skim milk), and some salt and pepper to season.
Then, add the eggs/milk to the sausage. Stir around, occasionally scraping the bottom of the pan, until the eggs are fully cooked.
Set pan aside and allow to cool for a bit.
Next, rip up wax paper a little bit bigger than a tortilla and make a pile.
Take a tortilla and spoon some of the egg mixture into the middle. Sprinkle with cheddar cheese over the top.
Fold up your burrito, then wrap in wax paper or foil. Repeat with remaining egg mixture, cheese and tortillas.
Allow the breakfast burritos to chill in the fridge for awhile until they are really cool all the way through. DO NOT put them straight to the freezer! I typically place my burritos in the fridge for about 5-6 hours.
Once they are nice and cooled, place in a labeled freezer bag.
To cook, remove wax paper/foil and place burrito on a microwavable plate. Cook for about 1 minute and 30 seconds. We like to top ours with a little spicy sriracha sauce. Yum!
