BBQ + Onion Meatloaf

We loved this recipe at our house! French fried onions and BBQ sauce add a nice variation to your normal meatloaf recipe. Meatloaf is the perfect meal for a Sunday evening. We enjoyed ours with sweet potato fries and a green salad on the side. 

BBQ + Onion Meatloaf 

Serves: 5 Prep: 20 minutes

Ingredients:

1.5lb lean ground beef (we use 93 lean)

1 cup of french fried onions

1/2 cup Panko breadcrumbs

2 eggs

1/2 cup BBQ sauce, plus more for topping

1 cup of shredded cheddar cheese

1 tsp Garlic Powder

1 tsp Onion Powder

Salt and Pepper

Directions: 

  1. Preheat your oven to 350 degrees and lightly spray a baking pan with nonstick cooking spray. 
  2. In a large mixing bowl, combine all ingredients - ground beef, french fried onions, breadcrumbs, eggs, 1/2 cup BBQ sauce, shredded cheddar cheese, garlic/onion powder, and salt/pepper. Mix with your hands, using a raking motion until combined. 
  3. Form 5 "loaves" of even sizes, and place in baking pan. Top with BBQ sauce and cover in foil. 
  4. Cook halfway covered, and uncover halfway through (ours took about an hour). Ground beef should be cooked until it reaches an internal temperature of 160 degrees. Let it sit for a few minutes before serving. 
  5. YUM.

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
