Ritz Cracker Crack

Each year I typically make a traditional English toffee but I altered my recipe this year to lend a more sweet and salty flavor. I basically made my English toffee, but I poured it over Ritz crackers and added a sprinkling of sea salt...DELICIOUS! This will be a stand-out on your Christmas cookie trays. 😉

Ritz Cracker Crack 

Ingredients:

1 cup of salted butter 

1 cup of light brown sugar 

1 -2 sleeves of "lightly salted" Ritz Crackers

1 cup of pecans, chopped finely 

1 package semi-sweet chocolate chips 

flaky sea salt for topping

Directions:

  1. Preheat your oven to 350 degrees. 
  2. To make this recipe really easy, use a nonstick silicone baking mat (I use these!) on a cookie sheet. Use a little butter to grease the baking mat really well. 
  3. Lay out the Ritz crackers evenly over the greased baking mat. Feel free to break the Ritz crackers into small pieces to fill in any gaps. 
  4. Sprinkle your chopped pecans over the top of the Ritz crackers. 
  5. Over medium heat, melt your butter in a skillet. Once your butter is melted, add in your brown sugar. 
  6. Stir your brown sugar and butter mixture until it reaches a rolling boil, then stop stirring. Cook until it reaches the "soft crack" stage. 
  7. Carefully pour the brown sugar/butter mixture over the crackers and pecans. Cook in your 350 degree oven for 4 minutes, then take out immediately. 
  8. Sprinkle your entire package of semi-sweet chocolate chips on top. Once they are completely melted, spread evenly over the top using the back of a spoon. 
  9. Once the chocolate is spread, sprinkle a little flaky sea salt on top. 
  10. I like to place this in the fridge at this point for a few hours until it is nice and set. Then, break it into bite-sized pieces. 
  11. Store in the fridge or freezer and take out when it's time to serve. 
  12. YUM. 😊

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
