What's Up Wednesday 10-25-2023

How is October coming to an end already?! It's been a quick, whirlwind of a month. Today I'm linking up with Sheaffer and Shay to share a little bit about "what's up" in my life right now.

What I'm Eating...

Give me all the cozy, fall foods! In the past few weeks we've enjoyed plenty of crockpot meals. I just love when I get home after a busy day to the smell of dinner cooking. 

We've had chili (+ a cinnamon roll - is that an Iowa-specific thing?)...

We've had sausage/kale/potato soup...

We've had sausage and pumpkin pasta...

Here's what's on the menu this week: 

Monday: Sausage and Pumpkin pasta 

Tuesday: Tacos 

Wednesday: Chicken cutlets in the air fryer + sweet potatoes

Thursday: Ham and Cheese sliders

Friday: something easy!

What I'm reminiscing about...

Last week by oldest son turned five! I took a little walk down memory lane. I don't know why, but 5 feels really big to me. I can't believe he will be starting kindergarten next year! 

What I'm loving...

This is my favorite hand cream! It smells delightful, isn't greasy, and is super moisturizing. My hands get really dry this time of year from the frequent handwashing, so I'm trying to apply this lotion often. 

What I've been up to...


It was  a whole lot of celebrating Sammy John last week! We had a long weekend and enjoyed lots of family time. 

We also carved pumpkins. Look at our little "Jack-O'-Lantern!"

What I'm dreading...

Dustin has a very long stretch of time at work before his next round of off-days. I have a lot of nights of single-parenting ahead of me! It will be nice to have that behind us. 

What I'm working on...

Grading, grading, grading. My first graders had lots of quizzes in math this week! 

I'm also working on...

Christmas shopping lists! I'm an Enneagram 1 (a love of organization and lists) so the act of making a list really speaks to me. Haha. 

What I'm excited for...

YES! This time next month we'll be in full-on Christmas mode and it makes me GIDDY. 

What I'm watching... 

I've really been into "Dancing with the Stars" this season! I love Julianne Hough as a host, and it's been fun watching the dancers improve each week. 

What I'm reading...

I just finished reading "The Winter Garden" this week by Kristin Hannah. It was exceptional. It's a little slow to start, but there are tons of little Easter eggs hidden throughout that all lead to a really amazing ending. I will warn you, some parts are difficult to read, but it hooks you in. 

What I'm listening to...


Currently, the feedback of the baby monitor and the sound of a Hallmark Christmas movie. This made me laugh out loud - so true, but I still love them! 

What I'm looking forward to...


We have a really fun Halloween night planned! We have a really great neighborhood for Trick-Or-Treating. Sammy is going to be either be a Broncos Football player, or Spiderman. I think it will be a gametime decision. ๐Ÿ˜‰ Jack is going as a skunk and I cannot wait to see him in his costume!

  1. I might eat more chili if it was served with a cinnamon roll! We typically have cornbread (which I am also not a huge fan of so I rarely serve chili. LOL). But I do love a good cinnamon roll. That 5th birthday cake is so cute. I LOVED the Winter Garden; I read it years and years ago and it's one of those stories that really stuck with me.

    1. I had such a hard time putting the book down, and I definitely think it is going to stick with me for awhile. I finished it yesterday and I am still thinking about it!

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. ๐Ÿ˜‰ We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. ๐Ÿ˜‰ He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
