Few things bring me more satisfaction than dinner cooking in a crockpot all day long. I love walking in the door after a busy day to the smell of dinner and knowing that my prep work is minimal. This soup is very similar to the popular Zuppa Toscana from Olive Garden, but I made it crock-pot friendly. I hope you cook it for your family and enjoy!
Sausage/Kale/ & Potato Soup
Prep Time: 30 minutes Serves: 8
Ingredients:
1 lb Italian Sausage
1 small white onion, diced
2 large carrots, diced
2 stalks of celery, diced
1 cup of assorted small potatoes, sliced
1 tablespoon minced garlic
3 large handfuls of chopped kale
1 32 oz. carton chicken broth, plus another 1/2 carton chicken broth
1/3 cup heavy cream
Directions:
- Brown your Italian Sausage in a medium skillet over medium heat
- Mix in onion, carrot, celery, potato and garlic and stir until softened, 3-5 minutes. Add some salt and pepper to taste.
- Place meat and vegetable mixture in a crock pot set to low.
- Top with chicken broth.
- Top with lale.
- Cook all day on low, or on high for 3-4 hours.
- Just before serving, stir in heavy cream.
- Serve it up, garnishing with parmesan cheese.
