Grilled Meatloaf

This is such a fun twist on a classic recipe! I took my regular meatloaf recipe, adapted it to be a bit more "grill friendly." You will need a grill basket to prepare this meal, preferably one with two sides. We use this one. Warning: you will need a hot pad when you flip it - it gets hot!


Let me walk you through how to make it: 

Ingredients:

2 lb lean ground beef (I like to use 93/7)

1/2 white onion, diced very finely

1 tsp minced garlic

1 egg

1 tsp Dijon mustard

1 tsp Worcestershire sauce

1/2 cup panko breadcrumbs 

Several strips of bacon

Salt & Pepper to taste

Directions:

  1. In a large bowl, combine ground beef, onion, garlic, egg, mustard, breadcrumbs, Worcestershire sauce and salt and pepper. Stir together using your hands until well combined. 
  2. Spray your grill basket with some non-stick cooking spray. Do this over a sink. 
  3. Layer bacon down on one side of the grill basket. 
  4. Place meat mixture over the top of the bacon and pat to distribute evenly. 
  5. Place the top of the grill basket on. 
  6. Fire up your grill, and place the grill basket on it with the bacon side down first. You want to do this so the bacon fat drips down instead of through your beef mixture. 
  7. Flip after cooking for about 10-15 minutes. Cook until it reaches an internal temperature of 160 degrees F. Depending on the temperature of your grill cooking time will vary.
  8. Important - let your meatloaf rest for a few minutes before you remove it from the basket. We like to flip it onto a baking sheet. Serve with BBQ sauce or ketchup for dipping.

This time of year it's important to get dinner on the table quickly and I love that this kit involves minimal clean-up.  This little boy is determined to start walking. He's getting braver and braver by the day!  There's a new flag football player in town. 😉 Sammy started flag football this week and I can't wait to watch him in action this fall! This is his "tough face." Haha.  Sammy's lunches have been a favorite for sure....

Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. Haha.  Needless to say, I'm feeling extra perky this Friday.  I'm linking up with Andrea  and  Erika  to share a few favorites from my week. 😊 Sammy's flag football team is the Chiefs, and so obviously his favorite dog supporter needed to get a matching outfit. Look at Sammy's red cheeks! We're ready for fall weather to arrive in full force over here. Haha.  This week was National Night Out in our town, and Dustin helped work it. I stopped by with the boys, and Jack was genuinely surprised to see so many people who looked like his daddy. He got so excited when he saw the first police car, but was disappointed his daddy wasn't inside. 😉 D...

Friday Favorites [9-13-2024]

  HOORAY for Friday. 😊 I couldn't be more excited for the weekend ahead! I'm linking up with  Andrea  and  Erika  to share some of my favorite "happies" from the week.  We had THE BEST weekend last weekend! Saturday morning we were up and out the door early for a trip to Trader Joe's where we filled out cart with all the pumpkin-goodness we could find.  We were home by 11 and decided it was time to put some more fall decor outside... ...to the delight of the boys. 😉 We have an inflatable dachshund (of course we do) that says "Happy Fall-oween!" It's a favorite of the boys for sure.  A trip to Trader Joe's means that my family is having yummy (easy!) dinners during the week. I made a ridiculously easy  Potsticker Stir Fry  for an easy dinner this week while Dustin worked late. We also made some yummy flat breads using their Carne Asada, chimichurri sauce and arugula. This one was our FAVORITE!  Jack's favorite thing to do these day...
