This is such a fun twist on a classic recipe! I took my regular meatloaf recipe, adapted it to be a bit more "grill friendly." You will need a grill basket to prepare this meal, preferably one with two sides. We use this one. Warning: you will need a hot pad when you flip it - it gets hot!
Let me walk you through how to make it:
Ingredients:
2 lb lean ground beef (I like to use 93/7)
1/2 white onion, diced very finely
1 tsp minced garlic
1 egg
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1/2 cup panko breadcrumbs
Several strips of bacon
Salt & Pepper to taste
Directions:
- In a large bowl, combine ground beef, onion, garlic, egg, mustard, breadcrumbs, Worcestershire sauce and salt and pepper. Stir together using your hands until well combined.
- Spray your grill basket with some non-stick cooking spray. Do this over a sink.
- Layer bacon down on one side of the grill basket.
- Place meat mixture over the top of the bacon and pat to distribute evenly.
- Place the top of the grill basket on.
- Fire up your grill, and place the grill basket on it with the bacon side down first. You want to do this so the bacon fat drips down instead of through your beef mixture.
- Flip after cooking for about 10-15 minutes. Cook until it reaches an internal temperature of 160 degrees F. Depending on the temperature of your grill cooking time will vary.
- Important - let your meatloaf rest for a few minutes before you remove it from the basket. We like to flip it onto a baking sheet. Serve with BBQ sauce or ketchup for dipping.
