Caramel Apple Crisp

 As soon as fall begins I want to infuse the flavors of maple, pumpkin, apple, and cinnamon into as many dishes as possible. I love an apple crisp, but I wanted to take it to the next level, so I added some caramel to it. The result is heavenly! When I make apple crisp I always double the "crisp" part of the recipe, because that's my favorite part. I know I can't be alone in this. 😉 Here's how to make this yummy, cozy fall dessert.

Caramel Apple Crisp

Filling Ingredients:

5 apples, peeled and cut into slices (I used 3 Granny Smith and 2 Honeycrisp)

1/2 cup white sugar

1 tsp cinnamon

1 tsp vanilla extract

1/2 cup caramel bits (you can find these in the baking section by the chocolate chips)

Topping Ingredients:

1 cup all purpose flour

1 cup Old Fashioned Oats

1 cup brown sugar, packed

1/2 tsp salt

1 tsp cinnamon

1 stick of butter, melted

Directions:

  1. Preheat your oven to 350, and grease an 8x8 pan with non-stick cooking spray. 
  2. In a large bowl, mix together your apples, white sugar, vanilla and cinnamon. Place mixture in your greased 8x8 pan. 
  3. Sprinkle caramel bits over the top. 
  4. In a different bowl, mix together flour, Old Fashioned Oats, brown sugar, salt, cinnamon and stick of butter. Mix together until crumbly and well combined. 
  5. Sprinkle the mixture over the top of your filling, pressing down if necessary. 
  6. Cook in a preheated oven until the apples are soft and the top is brown - usually around 35-40 minutes. 
  7. Serve with vanilla bean ice cream. Yum.

Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today! 

Sammy is SEVEN!

  Sammy is SEVEN! Seven years ago we were at the hospital, excited and nervous to meet our Samuel John.  Sammy was always a happy baby and toddler, and that's continued into childhood. He is so affable, friendly, and confident! He loves his family, he loves to play and he loves to be active. Games are his favorite, and he loves to "snuggle."  Since returning back to school, he's developed a huge love of reading! As a first grade teacher this WARMS my heart. He loves most books, but right now he favors graphic novels. He is the best big brother. Without us asking, he is so willing to help his brother. Just yesterday, Jack sneezed and Sammy ran to get him a wipe and then proceeded to wipe Jack's nose for him. If someone gets hurt he often hurries to see what's wrong and if he can help. He's a lot like Dustin in that he loves to have fun and be social. He's a lot like me in that he loves to make lists and know the when/how things are happening. He loves a...

What's Up Wednesday [September 2024]

And just like that...it's the last week of the month! Time for What's Up Wednesday with  Sheaffer  and  Shay .  What We're Eating this Week... Fall weather is officially upon us, so I'm craving warm, comforting meals. This week's menu is... Sunday - Meatloaf and green beans Monday - Chicken Pot Pie with a green salad Tuesday - "Smash Burger" tacos  Wednesday - BBQ Chicken bowls Thursday - Spaghetti  Friday - we're grilling up the Trader Joe's Unexpected Cheddar Chicken sausages...so good!  My boys have been eating a lot of pumpkin muffins this week. I had to make a second batch this evening because Sammy ate 5 (5!) in one day.  We're basically eating pumpkin in whatever we can these days, which is why I made these pumpkin sourdough discard bagels.
