Caramel Apple Crisp

 As soon as fall begins I want to infuse the flavors of maple, pumpkin, apple, and cinnamon into as many dishes as possible. I love an apple crisp, but I wanted to take it to the next level, so I added some caramel to it. The result is heavenly! When I make apple crisp I always double the "crisp" part of the recipe, because that's my favorite part. I know I can't be alone in this. 😉 Here's how to make this yummy, cozy fall dessert.

Caramel Apple Crisp

Filling Ingredients:

5 apples, peeled and cut into slices (I used 3 Granny Smith and 2 Honeycrisp)

1/2 cup white sugar

1 tsp cinnamon

1 tsp vanilla extract

1/2 cup caramel bits (you can find these in the baking section by the chocolate chips)

Topping Ingredients:

1 cup all purpose flour

1 cup Old Fashioned Oats

1 cup brown sugar, packed

1/2 tsp salt

1 tsp cinnamon

1 stick of butter, melted

Directions:

  1. Preheat your oven to 350, and grease an 8x8 pan with non-stick cooking spray. 
  2. In a large bowl, mix together your apples, white sugar, vanilla and cinnamon. Place mixture in your greased 8x8 pan. 
  3. Sprinkle caramel bits over the top. 
  4. In a different bowl, mix together flour, Old Fashioned Oats, brown sugar, salt, cinnamon and stick of butter. Mix together until crumbly and well combined. 
  5. Sprinkle the mixture over the top of your filling, pressing down if necessary. 
  6. Cook in a preheated oven until the apples are soft and the top is brown - usually around 35-40 minutes. 
  7. Serve with vanilla bean ice cream. Yum.

  I'm always happy to see Friday, but especially when the weather calls for... this gloriousness this weekend, I.Can't.Wait.!  I'm linking up with Andrea  and Erika  to share some favorites from our busy, short week!  These brothers get so excited to see each other everyday after school, it melts me! They were together at childcare last year, so it makes me think that they have to be missing each other this year.  Brother time is always a favorite of mine. 😊 The chicken street taco kit from Costco is a favorite as well! This time of year it's important to get dinner on the table quickly and I love that this kit involves minimal clean-up.  This little boy is determined to start walking. He's getting braver and braver by the day!  There's a new flag football player in town. 😉 Sammy started flag football this week and I can't wait to watch him in action this fall! This is his "tough face." Haha.  Sammy's lunches have been a favorite for sure....

Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. Haha.  Needless to say, I'm feeling extra perky this Friday.  I'm linking up with Andrea  and  Erika  to share a few favorites from my week. 😊 Sammy's flag football team is the Chiefs, and so obviously his favorite dog supporter needed to get a matching outfit. Look at Sammy's red cheeks! We're ready for fall weather to arrive in full force over here. Haha.  This week was National Night Out in our town, and Dustin helped work it. I stopped by with the boys, and Jack was genuinely surprised to see so many people who looked like his daddy. He got so excited when he saw the first police car, but was disappointed his daddy wasn't inside. 😉 D...

Friday Favorites [9-13-2024]

  HOORAY for Friday. 😊 I couldn't be more excited for the weekend ahead! I'm linking up with  Andrea  and  Erika  to share some of my favorite "happies" from the week.  We had THE BEST weekend last weekend! Saturday morning we were up and out the door early for a trip to Trader Joe's where we filled out cart with all the pumpkin-goodness we could find.  We were home by 11 and decided it was time to put some more fall decor outside... ...to the delight of the boys. 😉 We have an inflatable dachshund (of course we do) that says "Happy Fall-oween!" It's a favorite of the boys for sure.  A trip to Trader Joe's means that my family is having yummy (easy!) dinners during the week. I made a ridiculously easy  Potsticker Stir Fry  for an easy dinner this week while Dustin worked late. We also made some yummy flat breads using their Carne Asada, chimichurri sauce and arugula. This one was our FAVORITE!  Jack's favorite thing to do these day...
