With the flavors of brown sugar, apple butter and cinnamon, these cookies absolutely scream fall to me. I recommend cozying up with a blanket and enjoying one with a warm cup of coffee. 😉 Have a wonderful Labor Day!
Apple Butter Oatmeal Cookies
Serves: makes about 3 dozen
Ingredients:
1 cup butter, softened to room temperature
2 cups brown sugar
2 eggs
1 tsp vanilla extract
1 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/2 cup apple butter
2 cups all-purpose flour
4 cups Old Fashioned Oats
1 cup cinnamon baking chips
Directions:
- Pre-heat an oven to 350 degrees and line baking sheets with parchment paper.
- In a stand mixer fitted with a paddle attachment, beat brown sugar and butter together until light and fluffy.
- Add in eggs, one at a time, followed by vanilla extract.
- Mix in baking soda, salt, and cinnamon until combined.
- Mix in apple butter until combined.
- Slowly add flour and Old Fashioned oats until evenly distributed.
- Stir in cinnamon baking chips.
- Using a cookie scoop, place on baking sheet. Bake until tops of cookies are set, and edges of the cookies are golden brown.
- Let cool on cookie sheets for a few minutes before removing.
- Enjoy!
