This is a favorite childhood recipe of mine, and one that my mom enjoyed as a little girl as well. The recipe has evolved over the years and I've added a few extra touches to this version. Through the generations one ingredient has stayed the same: sliced provolone cheese. I'm not sure why, but if it's what my Nanny and mom insisted on I'm not going to argue. :) This meal is one of our very favorites. We typically serve with a green salad on the side. Enjoy!
Serves: 6 Prep Time: Less than 1 hour
Ingredients:
1 lb lean ground beef
1/2 red onion, diced
1 green pepper, diced
1 package english muffins, split in half
1 package provolone cheese slices
2 tablespoons garlic, minced
8 ounces tomato sauce
1/2 cup ketchup
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 tsp yellow mustard
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and Pepper to taste
Directions:
1. Preheat oven to 350 degrees and arrange your halved english muffins on a baking sheet. Place english muffins in the oven for about 3-5 minutes so they can begin to toast up.
2. Meanwhile, heat a skillet on medium heat and begin browning your lean ground beef. When the beef is mostly cooked, add in onion and green pepper.
3. After the onion and green pepper have softened, mix in the following ingredients: minced garlic, tomato sauce, ketchup, Worcestershire sauce, brown sugar, yellow mustard, garlic powder, onion powder, and salt and pepper. Stir well and allow the mixture to simmer for about 10 minutes. *If you are making ahead, at this point put into a crock pot on low until ready to assemble.
4. Spoon meat mixture over the top of each english muffin, then top with a piece of provolone cheese. Bake in your preheated oven until the cheese has melted and the english muffin is toasted along the edge.
5. Serve immediately and enjoy. This recipe makes for wonderful leftovers - if you get that far. :)
