Butterscotch Snickerdoodle Bars

 I frequently cook with butterscotch flavoring in our household as it's a favorite flavor of my boys. This oatmeal bar has butterscotch chips and a layer of cinnamon sugar. It's sweetened with both vanilla and maple extract; all of these flavors together make a bar that is quintessentially "fall" flavored. Try a bar crumbled over vanilla ice cream...I dare you. :)


Butterscotch Snickerdoodle Bars

Ingredients:

3/4 cup butter, softened

1/2 cup white sugar

1 cup brown sugar, packed

1 1/2 tsp baking powder

1/2 tsp salt

2 eggs

1 tsp maple extract

1 tsp vanilla extract

1.5 cups white flour

1.5 cups oats (I used quick cooking)

1 cup butterscotch chips

Cinnamon Sugar for filling (1/3 cup sugar and 1 T cinnamon)

Directions:

1. Grease a 9x13 pan with baking spray and turn your oven to 350. 

2. In a stand mixer fitted with a paddle attachment, beat butter and white/brown sugars together until fluffy. Add in eggs, one at a time, then add vanilla and maple extracts. 

3. Add in baking powder and salt, then mix again.

4. Mix in flour and oats and once combined add butterscotch chips until evenly distributed. 

5. Put 3/4 of your batter into your greased pan. Wet your fingers and press down evenly over your pan. 

6. Sprinkle cinnamon sugar mixture over the top. 

7. Dot remaining batter over the top. It will not cover the entire pan. 

8. Bake at 350 until batter in the middle is set and lightly browned.

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
