Lactation Cookies
I know this is a very specific recipe to be sharing, but I've experimented with many different lactation cookie recipes and this one is by far my favorite! It is chewy and dense, and freezes really well. It's filled with all sorts of galactagogue ingredients that boost milk supply and isn't too terribly sweet. I don't struggle with milk supply, but like to eat these cookies when I want a sweet treat that doesn't feel terribly unhealthy (thanks flax seed and oatmeal.) Sounds like good math to me. :)
I'd recommend making a batch and freezing them, and pulling a few out of the freezer at a time as needed.
Ingredients:
1 cup butter, softened
1 cup white sugar
1 cup brown sugar, pressed
4 tablespoons water
2 tablespoons flax seed meal
2 eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats (I use quick cooking, but it probably doesn't matter which you use)
3 tablespoons brewers yeast
1 cup of butterscotch chips (if you prefer a different flavor, go for it!)
Directions
- In a small bowl, combine flax seed meal and water and stir to combine. Let sit for a few minutes.
- In the bowl of a stand mixture fitted with a paddle attachment, add butter and white/brown sugar. Beat until light and fluffy, usually about 3 minutes.
- Add in vanilla, eggs, baking soda, salt, and water/flax seed meal mixture. Beat until combined.
- Add in brewers yeast and flour, beat until combined.
- Add in oats and butterscotch chips, beat until combined.
- Roll dough into balls (I like to use a cookie scoop) and bake in a 350 degree oven until lightly brown on the outside.
- If planning to freeze, allow cookies to cool to room temperature before placing in a gallon bag to freeze. Otherwise, enjoy the cookies and the milk producing benefits!
