Lactation Cookies

I know this is a very specific recipe to be sharing, but I've experimented with many different lactation cookie recipes and this one is by far my favorite! It is chewy and dense, and freezes really well. It's filled with all sorts of galactagogue ingredients that boost milk supply and isn't too terribly sweet.  I don't struggle with milk supply, but like to eat these cookies when I want a sweet treat that doesn't feel terribly unhealthy (thanks flax seed and oatmeal.) Sounds like good math to me. :)

I'd recommend making a batch and freezing them, and pulling a few out of the freezer at a time as needed. 

Ingredients: 

1 cup butter, softened

1 cup white sugar

1 cup brown sugar, pressed

4 tablespoons water

2 tablespoons flax seed meal 

2 eggs

1 teaspoon vanilla

3 cups flour

1 teaspoon baking soda

1 teaspoon salt 

3 cups oats (I use quick cooking, but it probably doesn't matter which you use)

3 tablespoons brewers yeast

1 cup of butterscotch chips (if you prefer a different flavor, go for it!)

Directions

  1. In a small bowl, combine flax seed meal and water and stir to combine. Let sit for a few minutes. 
  2. In the bowl of a stand mixture fitted with a paddle attachment, add butter and white/brown sugar. Beat until light and fluffy, usually about 3 minutes. 
  3. Add in vanilla, eggs, baking soda, salt, and water/flax seed meal mixture. Beat until combined. 
  4. Add in brewers yeast and flour, beat until combined. 
  5. Add in oats and butterscotch chips, beat until combined. 
  6. Roll dough into balls (I like to use a cookie scoop) and bake in a 350 degree oven until lightly brown on the outside. 
  7. If planning to freeze, allow cookies to cool to room temperature before placing in a gallon bag to freeze. Otherwise, enjoy the cookies and the milk producing benefits!

Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. Disney World: Day 6 Recap

We're a little bit behind in posting, but today I'm sharing our day 6 recap to our Disney World trip! Today we went to...Animal Kingdom!  I love an Animal Kingdom park day following a rest day. Animal Kingdom has lots of opportunities for animal viewing, and the animals are most active during the morning. It's a great idea to start your day at Animal Kingdom early to maximize your animal viewing opportunities.  On this day we were up and on our way around 8:00. We had a lightning pass for the Nav'i River Journey beginning at 8:05. This ride is located in the Pandora section of the park and it is truly amazing. There are lots of floating mountains, water features, and fun details throughout. Although the boys had zero frame of reference about the movie, we enjoyed the ride and some breakfast before heading to... Festival of the Lion King! Disney World: Day 7 Recap

We woke up on January 1st ready for our last full day at Disney World!  The boys were a little slow moving this morning (who came blame them after 4 park days 😅) but we had a Lightning Lane booked at 8:05AM for Tiana's Bayou Adventure (formerly known as Splash Mountain). I sent Sammy and Dustin ahead to Magic Kingdom so Jack could have a slower start, and we met up with them in Fantasyland right around 9:30. We knew today was going to be a long park day. We were worried to leave for a rest in case the park reached capacity, and we wanted to make sure we stayed for fireworks!  We packed our morning with lots of rides and tried the new beignets. Sammy loved them! I also caught my favorite picture of the trip this morning. I was trying to take a cute picture of the boys, and Sammy's arm was around Jack's shoulders. At this exact moment...
