BLT Pasta


BLT Pasta

Serves: 5-6    Preparation Time: 20-30 minutes

Our garden has an abundance of cherry tomatoes so I'm on the hunt to use them in creative, delicious ways. I found a recipe for BLT pasta online but made a few changes to create this dish. It's yummy, not too heavy, and the perfect summer dinner. :)


Ingredients: 

1/2 package of pasta, I like to use whole wheat spaghetti

Olive Oil 

1 tablespoon butter

1 red onion, diced

1/2 can of corn, drained 

1/2 package fresh spinach 

1/2 package bacon 

Cherry Tomatoes, cut in half 

Salt, pepper, garlic powder 

Parmesan cheese

Directions: 

  1. Get a large pot of water up to a boil for the pasta. Add pasta when water is boiling and cook until al dente. Reserve 1/4 cup of pasta water. 
  2. Begin cooking your bacon separately. I like to cook our bacon in the air fryer but another pan or in the oven would work fine. Cook your bacon until crisp, then drain and cut into pieces. 
  3. Drizzle some olive oil into a large sauté pan. Begin sautéing the diced red onion and top with salt and pepper, and a few shakes of garlic powder. 
  4. Once onion has softened, add in corn, cooked bacon and 1/2 the bag of spinach and cook until spinach is wilted. 
  5. Add in cherry tomatoes, tablespoon of water, cooked pasta, and the pasta water. Toss all ingredients together using tongs. Add more salt, pepper, and about 1/4 cup of parmesan cheese. 
  6. Top with more cheese before serving.

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
