Dill Pickle Pasta Salad

I've been the biggest fan of pickle flavored items this year! Trader Joe's got me hooked with their variety of pickle flavored popcorn, mustard, cheese, chips...I could go on and on. :) I found a dill pickle pasta salad recipe online and tweaked it until it was a perfect side dish to go with dinner on the grill! 

Dill Pickle Pasta Salad

Prep Time: 15 minutes    Servings: 6

Ingredients: 

1/2 box of medium sized shell pasta

2/3 cup of mayonnaise (I like Hellman's)

1/3 cup of sour cream (reduced fat works great!)

4 tablespoons of pickle juice

3/4 cup of chopped dill pickles (I like the refrigerated kind) 

1/4 cup of diced white onion

1/2 cup of diced cheddar cheese

2 tablespoons of chopped fresh dill 

Couple shakes of paprika

Salt, pepper 

Directions:

  1. Place a large pot of water on the stove to boil. 
  2. Dice/Chop your dill pickles, white onion, cheddar cheese, and dill. Then place in the bottom of a bowl. 
  3. In another bowl, mix the sour cream, mayonnaise, pickle juice, salt, pepper, and paprika. Mix until well combined. 
  4. Cook your pasta shells until they are al dente, then drain in a colander and run under cool water. 
  5. Place cooled pasta in the bowl with dill pickles, onion, cheddar cheese and dill. Then toss with dressing. Keep pasta salad refrigerated until dinner time! 


This is about the size you'll want to chop your cheddar cheese and pickles to: just big enough that you can get some for each bite!

  It's Friday, and it's the 4th of July Eve! Friday Favorites [6-14-2024]

  I hate to be the one to point it out...but how in the world is June almost halfway over?! I would like to hit the "slow down" button on summer, please. 😉 Like usual, I'm linking up with  Andrea  and  Erika  to share some favorites from our week. Here we go! You'll notice that many of my "favorites" are food related this week. One of the reasons I love summer is that the cooking is easy, and I can take some time making things I typically wouldn't have time for. Wednesday evening we grilled pork chops and I was hunting for a side dish. I found the ingredients for taco dip and we gobbled it right up. Taco dip is basically a salad, yes?  Jack (and big brother!) have been loving water play this summer. Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. Haha.  Needless to say, I'm feeling extra perky this Friday.  I'm linking up with Andrea  and  Erika  to share a few favorites from my week. 😊 Sammy's flag football team is the Chiefs, and so obviously his favorite dog supporter needed to get a matching outfit.
