Salted Caramel Butterscotch Bars

Caramel and butterscotch are two favorite flavors in my household! I started baking a lot with butterscotch when Sammy was two, because for the longest time he didn't like chocolate! Thank goodness he's gotten over that food aversion. :) Dustin is a big fan of caramel and butterscotch, so these bars are a hit in our house. Add in a little flaky sea salt, some oatmeal for texture, and I'm ready to lick the pan. :) A yellow cake mix is the base of this bar recipe, and I make them in an 8x8 pan. This makes the bars super dense and really easy to pull together quickly! If your bars look to be brown around the edges but still pretty "gooey" near the middle, just pop the bars under the broiler for a minute or two. Don't let them get too overdone! I hope you and  your family try this recipe and enjoy them as much as we did.

Salted Caramel Butterscotch Bars

Serves: 12    Preparation Time: 10 minutes    Baking Time: 25 minutes

Ingredients:

1 Yellow Cake Mix (any brand works fine, even store brand!)

1/2 Cup Vegetable Oil

2 Eggs

1 Cup Old Fashioned Oats

1 Cup Butterscotch Chips

1 Cup Caramel Bits

1 Can Sweetened Condensed Milk

Flaky Sea Salt

Directions:
  1. Preheat your oven to 350 degrees, and lightly grease an 8x8 pan (I use Pam)
  2. In a bowl, mix together the yellow cake mix, 1/2 cup vegetable oil, and 2 eggs.
  3. Mix in 1 cup of Old Fashioned Oats, and spread 2/3 of the mixture into your pan.
  4. In another bowl, mix together the butterscotch chips, caramel bits, and spread evenly over the cake mix base.
  5. Pour your can of sweetened condensed milk evenly over the top of your chips.
  6. Take the remaining cake mix base, and crumble over the top.
  7. Shake a little flaky sea salt over the top. Be careful not to overdo it - a little is all you need!
  8. Bake at 350 for about 25 minutes, or until a toothpick inserted into the top comes out clean. Let cool for about 30 minutes before slicing.

This is how the bars will look prior to baking. See all of that gooey goodness underneath?

Note: This is extra delicious with a scoop of vanilla bean ice cream. :)

Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. Haha.  Needless to say, I'm feeling extra perky this Friday.  I'm linking up with Andrea  and  Erika  to share a few favorites from my week. 😊 Sammy's flag football team is the Chiefs, and so obviously his favorite dog supporter needed to get a matching outfit. Look at Sammy's red cheeks! We're ready for fall weather to arrive in full force over here. Haha.  This week was National Night Out in our town, and Dustin helped work it. I stopped by with the boys, and Jack was genuinely surprised to see so many people who looked like his daddy. He got so excited when he saw the first police car, but was disappointed his daddy wasn't inside. 😉 D...

The Brisel family is OFF!

I'm so excited to share that our family is celebrating the holiday season at our very favorite place...Disney World! This trip has been a long time coming. We have been saving and planning for over a year, and yesterday we [yes we...Santa doesn't get credit for this one 😉] surprised our boys with a trip to Disney World for their Christmas gift. Disney is truly Dustin and my happy place, so we couldn't be more excited to bring the boys!  While we're gone I plan to blog about our trip, so I'm hoping to share an update tomorrow evening. For some who may not know, I am working my way through the certification process of becoming a Smart Moms Travel Agent, which is a travel company that specializes in trips to Disney World. I'm hopeful that it might turn into a fun hobby that lets me share a little bit of my Disney knowledge with other families. 😊 I thought blogging our trip would be a fun resource to share with future clients! For a little recap of today... We wer...

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Minnie, Daisy, Donald and Goofy are all dressed in their beach attire, and make their way around the restaurant several times. You're also able to do a ...
