Everything Bagel Breakfast Casserole

I love, and I mean LOVE a breakfast casserole. Growing up, breakfast casseroles were typical items on the menus for holiday breakfasts. I think they're too delicious to only eat a few mornings a year! This breakfast casserole has the typical ingredients: eggs, milk, breakfast sausage, cheese, salt and pepper, but instead of a traditional bread/crouton/croissant I used....Everything Bagels and Everything but the Bagel seasoning. This added such an interesting texture and crunch! Definitely try this recipe! 




Everything Bagel Breakfast Casserole 

Serves: 6    Preparation Time: 10 minutes    Baking Time: 35-40 minutes

Ingredients: 

7 Eggs 

3/4 cup milk (I used skim)

1/2 lb. breakfast sausage, browned, crumbled and drained

2 Everything Bagels, torn into bite sized pieces

1 Cup Shredded Sharp Cheddar Cheese

Salt & Pepper

Everything but the Bagel seasoning 

Directions: 

  1. Lightly grease a deep 8x8 pan (I use Pam), and preheat your oven to 350 degrees.
  2. Brown your sausage on the stovetop until cooked through, then drain. (I bought and browned an entire pound and used half for this casserole, and reserved half for homemade pizza the next evening!) 
  3. Tear your Everything Bagels into bite-size pieces and place at the bottom of your greased pan. 
  4. Place your browned breakfast sausage evenly over the top of your bagels. 
  5. In a separate bowl, whisk the eggs and milk together until evenly mixed. Season with salt and pepper, then pour over the top of your bagels and sausage. 
  6. Top with shredded cheddar cheese and Everything but the Bagel seasoning. 
  7. Bake, uncovered, in your preheated oven until the center is browned and no longer "jiggles" when you shake it. 
This breakfast casserole is delicious any time of day! I think the best part of a breakfast casserole for dinner is eating the leftovers for breakfast the next day. :) Enjoy!

Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. Sammy is SEVEN!

  Sammy is SEVEN! Seven years ago we were at the hospital, excited and nervous to meet our Samuel John.  Sammy was always a happy baby and toddler, and that's continued into childhood. He is so affable, friendly, and confident! He loves his family, he loves to play and he loves to be active. Games are his favorite, and he loves to "snuggle."  Since returning back to school, he's developed a huge love of reading! As a first grade teacher this WARMS my heart. He loves most books, but right now he favors graphic novels. He is the best big brother. Without us asking, he is so willing to help his brother. Just yesterday, Jack sneezed and Sammy ran to get him a wipe and then proceeded to wipe Jack's nose for him. If someone gets hurt he often hurries to see what's wrong and if he can help. He's a lot like Dustin in that he loves to have fun and be social. He's a lot like me in that he loves to make lists and know the when/how things are happening. He loves a...

What's Up Wednesday [September 2024]

And just like that...it's the last week of the month! Time for What's Up Wednesday with  Sheaffer  and  Shay .  What We're Eating this Week... Fall weather is officially upon us, so I'm craving warm, comforting meals. This week's menu is... Sunday - Meatloaf and green beans Monday - Chicken Pot Pie with a green salad Tuesday - "Smash Burger" tacos  Wednesday - BBQ Chicken bowls Thursday - Spaghetti  Friday - we're grilling up the Trader Joe's Unexpected Cheddar Chicken sausages...so good!  My boys have been eating a lot of pumpkin muffins this week. I had to make a second batch this evening because Sammy ate 5 (5!) in one day.  We're basically eating pumpkin in whatever we can these days, which is why I made these pumpkin sourdough discard bagels.
