Typically when I prepare tacos, it's the usual line-up: ground beef, taco seasoning, soft shell taco, etc.. I was looking for a new way to serve tacos and came across the "Stand and Stuff" crunchy taco shells. They're my new favorite way to serve a taco! I bake them in the oven after they've been stuffed and the shell gets toasted and crispy. This easy, extra step takes a simple taco to the next level. :) Enjoy this cheesy variation on a classic meal!
Cheesy Ranch Chicken Tacos
Serves: 6 Preparation Time: 4 hours Baking Time: 10 minutes
Ingredients:
1lb of boneless chicken breasts, cooked and shredded (see preparation note below)
1/3 cup ranch dressing (We like Trader Joe's ranch dressing)
1 can of Rotel
1 can of corn, drained
1 teaspoon of chili powder
1 cup of shredded cheddar cheese, plus more for topping
Juice of one lime
Salt and Pepper, to taste
Salsa and diced Red onion to garnish
Directions:
Chicken Preparation Note: To easily have shredded chicken ready to go for this recipe, place your chicken breasts in your slow cooker on low, and top with chicken broth, salt and pepper. Cook on low until cooked through, remove liquid and shred. I assemble this recipe entirely in the crockpot, that way the chicken mixture is warmed through and ready to be stuffed into taco shells.
- Preheat your oven to 350 degrees, and line a baking dish with aluminum foil. Place your crunchy taco shells on top.
- With your cooked, shredded chicken in the crockpot on low, add in 1/3 cup ranch dressing, 1 can of Rotel, 1 can of drained corn, 1 teaspoon of chili powder, shredded cheese, lime juice and salt/pepper to taste.
- Mix to combine and let mixture thoroughly warm. This step takes about 15-20 minutes.
- When mixture is warmed, it's time to stuff your "Stand and Stuff" taco shells! Fill each taco shell with the cheesy ranch chicken mixture, and top with a teaspoon of cheddar cheese.
- Cook your stuffed taco shells in the oven until the cheese is melted and the taco shells begin to get nice and toasted.
- Remove from oven and top with diced red onion and salsa.
- Enjoy!
