Busy Day Hamburger Soup

Even though the weather is refusing to cooperate, I've declared it's soup season. I love when a soup is simmering in the crockpot all day and you walk in the door to the smell of dinner already prepared. This recipe is incredibly easy with minimal ingredients.

Busy Day Hamburger Soup

Ingredients:

1 lb of lean ground beef, cooked and crumbled

1/2 white onion, diced

3 stalks celery, diced

1/2 bag of frozen mixed vegetables (the one I use has corn, carrots, and green beans)

1 14.5 oz can of diced tomatoes

1 8 oz can of tomato sauce

1 carton of lower sodium beef broth

Salt and Pepper

1 capful (about 1-2 tablespoons) of this seasoning

Optional Garnishes: sour cream, shredded cheddar cheese, sliced green onion, oyster crackers

Directions:

Dump all of your ingredients into your slow cooker and mix thoroughly to combine. Stir throughout the day.
When you're ready to serve, ladle into bowls. Top with your desired garnishes. That's it!

Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today! He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say. He loves his big brother and wants to do anything and everything that he does. He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle. He loves to play outside! We'll be living in the backyard this summer. He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting! Such a win! We love him and his silly little personality. We can't wait to celebrate him today!

Sammy is SEVEN!

Sammy is SEVEN! Seven years ago we were at the hospital, excited and nervous to meet our Samuel John. Sammy was always a happy baby and toddler, and that's continued into childhood. He is so affable, friendly, and confident! He loves his family, he loves to play and he loves to be active. Games are his favorite, and he loves to "snuggle." Since returning back to school, he's developed a huge love of reading! As a first grade teacher this WARMS my heart. He loves most books, but right now he favors graphic novels. He is the best big brother. Without us asking, he is so willing to help his brother. Just yesterday, Jack sneezed and Sammy ran to get him a wipe and then proceeded to wipe Jack's nose for him. If someone gets hurt he often hurries to see what's wrong and if he can help. He's a lot like Dustin in that he loves to have fun and be social. Friday Favorites [10-4-2024]

Happy, HAPPY Friday! I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. Haha. Needless to say, I'm feeling extra perky this Friday.
