What's Up Wednesday [April 2024]

Guys...it's May next week, and I couldn't be more giddy about it. I don't know where the month of April went! 

I'm sharing a little bit about What's Up in my life right now, alongside Shay and Sheaffer. Here we go! 

What we're eating this week...

Here's what we've been eating at the Brisel house this week: 

Sunday - we grilled steak, had baked potatoes and salad

Monday - we grilled chicken and bacon (always grill your bacon, so much less mess!) and put them in a low-carb wrap with cheese, lettuce, tomatoes and a drizzle of ranch

Tuesday - we grilled sausages and had them alongside sweet potato tots and fresh veggies

Wednesday - we're having breakfast for dinner this night, it's Sammy's favorite!

Thursday - pork chops and broccoli 

Friday - we'll grab something out

I have been living my very best sourdough bread life, and we can't get enough of it. This weekend I mixed in pesto and fresh mozzarella, and got this: 


Yes, please! 

Then I took some discard and made these browned butter chocolate chip cookies.


Yum. 

We are all big fans of my sourdough hobby at my house. 😉

What I'm reminiscing about...

Jack turns 11 months on May 1st, and I am quite emotional about it. The first year just always flies by! Last year at this time I was prepping my classroom for my long-term sub in the fall, and doing lots of nesting. 


And now we've got this busy boy who is crawling all over the place. Time goes so quickly!

What I'm loving...


At this moment, I'm loving a little ice cream and my bed. It's only Wednesday and it's already been a week!

What we've been up to...


We've been enjoying the warmer weather. We installed Sammy's old baby swing for Jack, and he loves it! 

We celebrated Dustin's birthday in April. I love this picture...everyone has their eyes open and is smiling. Haha!


And Sammy started t-ball camp. I'm SO EXCITED for his games this summer! 

What I'm dreading...


Anyone else? I have a heck of a time with allergies the last week of May, and into the first week of June. I'm dreading the itchy eyes and drippy nose!

What I'm excited about...

I'm excited for Mother's Day and the end of the school year. 

I love Mother's Day, and Dustin happens to be off this day. I'm really hoping it means I'll be able to sneak out for lunch with my mom and a pedicure. 😉

And this teacher is r e a d y for the end of the school year. I'm so looking forward to slow mornings at home with my boys and to spend lots of time outside. Bring it on! 

What I'm watching/reading...

I read some really great books this month! I read "The Rumor," "The Many Lives of Mama Love: A Memoir of Lying, Stealing, Writing and Healing," and "The Lazy Genius Way: Embrace What Matters, Ditch What Doesn't, and Get Stuff Done," and "The Castaways." 

I love me some Elin Hilderbrand. I discovered her just a few summers ago, so I'm still reading lots of her books. They're happy little reads with all of the summertime vibes, which I love. 

At the moment I'm listening to the feedback of the baby monitor, and some Mickey Mouse Clubhouse. Haha. 

What I'm wearing...

I have to give a shout-out to my precious cousin, Rachel. She is the founder of Inspira, and she sells fabulous athleisure wear.

Her mission is to increase research for Lupus prevention and treatment. Her mom, my Aunt Barb, tragically passed away from Lupus before she turned 49, and inspired Rachel's brand. All of the clothing comes with a sweet little butterfly logo, and it's great quality. Right now I'm wearing her Joy Joggers and they are as soft as butter. I didn't get a chance to take a photo of me wearing them, but they are wonderful! You should absolutely check Inspira out. 

What I'm doing this weekend...

This weekend is kind of a busy one [but a fun one!] for our family. On Saturday, we are celebrating my cousin Caitlin with a Bridal Shower, and on Sunday, my twin niece and nephew are getting baptized. So exciting! I'm looking forward to some family time, and Sammy is pumped for a hotel visit.

Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today! 

Disney World: Day 6 Recap

We're a little bit behind in posting, but today I'm sharing our day 6 recap to our Disney World trip! Today we went to...Animal Kingdom!  I love an Animal Kingdom park day following a rest day. Animal Kingdom has lots of opportunities for animal viewing, and the animals are most active during the morning. It's a great idea to start your day at Animal Kingdom early to maximize your animal viewing opportunities.  On this day we were up and on our way around 8:00. We had a lightning pass for the Nav'i River Journey beginning at 8:05. This ride is located in the Pandora section of the park and it is truly amazing. There are lots of floating mountains, water features, and fun details throughout. Although the boys had zero frame of reference about the movie, we enjoyed the ride and some breakfast before heading to... Festival of the Lion King! Truly - this show is worth the cost of your park admission alone. We loved the songs and the dances, and Sammy was thrilled with the f...

Disney World: Day 7 Recap

We woke up on January 1st ready for our last full day at Disney World!  The boys were a little slow moving this morning (who came blame them after 4 park days 😅) but we had a Lightning Lane booked at 8:05AM for Tiana's Bayou Adventure (formerly known as Splash Mountain). I sent Sammy and Dustin ahead to Magic Kingdom so Jack could have a slower start, and we met up with them in Fantasyland right around 9:30. We knew today was going to be a long park day. We were worried to leave for a rest in case the park reached capacity, and we wanted to make sure we stayed for fireworks!  We packed our morning with lots of rides and tried the new beignets. Sammy loved them! I also caught my favorite picture of the trip this morning. I was trying to take a cute picture of the boys, and Sammy's arm was around Jack's shoulders. At this exact moment... Jack took hold Sammy's finger and bit it. He didn't bite very hard, but hard enough to get this reaction from Sammy. 😂 It is somet...
