Here's a quick little weeknight meal idea for you...tostadas! I took a tortilla, crisped it up a bit, and topped it with all of the fixings. Dustin especially loved this one!
Easy Weeknight Tostadas
Serves: 6
Ingredients:
1 package of tortillas [I like to use Mission Carb Balance]
1 lb of lean ground beef [I use 93 lean]
1 package of low-sodium taco seasoning
1 can of refried beans, heated through
Tomatoes, diced
Red onion, diced
Cheddar cheese, shredded
Avocado, diced
Salsa
Sour Cream
Directions:
- Cook up your ground beef in a skillet with a little drizzle of olive oil. Break into small pieces.
- Mix in your taco seasoning, along with a little bit of water.
- While your taco meat is cooking, start making your tostadas. Place a tortilla on a dry skillet and turn over once it starts to bubble. You'll want the tortilla to be nice and toasted.
- To assemble, place a spoonful of refried beans on the tortilla and spread evenly. Top with taco meat, cheese, and all of your desired fixings.
- Enjoy!
