As the weather grows warmer, I like to shift our menu accordingly. Instead of comforting soups, we turn to the grill to cook up our proteins. I know it's only February, and I'm certain more cold weather will follow, but for today, let's pretend that Spring is here to stay. 😉
In high school I loved the Chicken Bacon Ranch wrap from Subway, and always ordered it to take on bus rides to away games when I was a cheerleader. This is a lightened up version that we love to eat for a quick weeknight meal. It was such a quick meal that I didn't even take a second to snap a picture of it...enjoy this funny meme instead. Haha!
Chicken Bacon Ranch Wraps
Ingredients:
1 lb of boneless skinless chicken breasts, grilled and cut into strips
8 pieces of bacon (we love to grill our bacon - it's mess free!)
8 flour tortillas (we like the Mission Low Carb brand)
Shredded Colby Jack cheese
cherry tomatoes, halved
Romaine lettuce
ranch dressing
Directions:
- To assemble, place some strips of chicken in your tortilla.
- Place a strip of bacon over the top.
- Top with shredded cheese, lettuce and tomatoes.
- To finish, drizzle with ranch dressing. At this point, my husband would add some dashes of hot sauce. 😉
- That's it! Quick and easy for a weeknight dinner.
