In the spirit of New Years resolutions, today I'm sharing a quick little recipe for some yummy energy bites. These bites are filled with oats, flax meal, peanut butter and honey. They are very adaptable, and it's easy to swap out or add ingredients to make them more your liking. Cheers to healthy, good-for-you snacks!
Energy Bites
Makes: about 22 bites
Ingredients:
4 cups old fashioned oats
1 cup creamy peanut butter
1/4 cup flax seed meal
1/2 cup honey
1 tsp vanilla extract
sprinkle of sea salt
baking chips (we like chocolate or butterscotch - measure with your heart 😉)
Directions:
- In a stand mixer fitted with a paddle attachment, add in all of your ingredients (minus your baking. chips).
- Mix until well combined.
- Stir in baking chips until distributed.
- Form into balls. You can enjoy them immediately or place in the fridge/freezer.
