Pudding Pops


Pudding Pops 

 This recipe is really simple it's silly - it is more so some inspiration for a fun activity you can do with your little one on a hot day. All you need is some pudding mix, milk, and popsicle molds. Sammy loved making these with me, and I loved the minimal effort it required. :)

Ingredients: 

1 box of chocolate pudding (3.4 oz)

1 box of white chocolate pudding (3.4 oz)

3 cups of skim milk, divided into 2, 1.5 cup portions

Directions: 

  1. In two separate bowls, mix the two puddings using 1.5 cups of milk for each pudding type. 
  2. Allow the pudding to set up while you spray some non-stick baking spray in your popsicle molds. 
  3. Layer the puddings into your popsicle molds, alternating flavors. You could also add smashed cookies or chocolate chips if you like. 
  4. Allow pudding popsicles to freeze for a bit in the freezer before inserting the popsicle sticks. 
  5. Freeze completely, then enjoy. :)

Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different. Jackson Nicholas is TWO!

Jackson Nicholas is officially TWO years old today!  He's been so fun lately, and definitely showing off his two-ness. 😉 He's got a LOT to say.  He loves his big brother and wants to do anything and everything that he does.  He loves his family and talks about them all day long. He loves Mickey Mouse and can't wait for his next trip to the castle.  He loves to play outside! We'll be living in the backyard this summer.  He loves to EAT! This has been his biggest area of growth from this time last year. At his first birthday party, he was just able to eat single-ingredient foods due to his allergies - we just didn't know what was safe for him. Yesterday he was able to have a cupcake..with frosting!  Such a win!  We love him and his silly little personality. We can't wait to celebrate him today!
