Chicken and Corn Chowder

 

Creamy Chicken Corn Chowder

Serves: 6-8 Cook Time: 6-8 Hours


I live for recipes I can place in the slow cooker in the morning, let cook all day, and come home after school to dinner almost ready. There's nothing quite like walking into your house after a busy day to the comforting smell of dinner. This is a creamy chowder that just requires a few cans to be opened, some chicken to be shredded before serving and some garnishes to be prepared. I hope your family enjoys this soup all through cozy season!

Ingredients: 

1 lb of boneless, skinless chicken breasts

2 cans of creamed corn 

1 can of cream of chicken soup (I use low-fat)

1 can of diced green chilis

1 cup of chicken stock 

1 tsp garlic powder

1 tsp onion powder

Salt and Pepper

1 package of cream cheese

2 cups fresh or frozen corn 

Shredded cheese, sour cream, shredded cheddar cheese, green onion and bacon to garnish

Directions:

1. Place chicken breasts in bottom of a slow cooker. Cover with cans of creamed corn, cream of chicken soup, green chilis, chicken stock, garlic powder, salt and pepper, and block of cream cheese. 

2. Cook on low for 6-8 hours. 

3. Shred chicken before serving, and mix in fresh or frozen corn kernels. Allow to heat through. 

4. Serve in bowls and top with garnishes.

Friday Favorites [3-1-2024]

  It's Friday and I'm here sharing my favorites from the week. As usual, I'm linking up with  Andrea  and  Erika . Here we go!  My very first favorite is that Jack is 9 months old today! I can't believe he's been "out" for as long as I was pregnant with him. 😊 He is the happiest little baby, and we just can't imagine life without him. Friday Favorites [4-5-2024]

  Hello, Friday. It's always nice to see you. 😉 I'm linking up with  Andrea  and  Erika  to share some favorites from my week. Here we go!  My first favorites are these sweet Easter pictures. We had a fun weekend celebrating! I love any reason for my little boys to get dressed up and get a cute picture. 😉 Another favorite on April 1st was celebrating Jack's 10 month birthday! I can't believe in two months he will be one. I loved this picture showing off his top two teeth.  3 years ago, my family was at one of our favorite places...Disney World! We went to Florida over Easter in 2021 with my extended family and it was a fun little trip. This trip was rescheduled from March of 2020, and I love seeing all of the memories from our trip. Sammy looks SO LITTLE.  In this picture we were riding Dumbo. I remember that Sammy got off the ride and promptly asked to go again. Friday Favorites [5-3-2024]

  Yay! It's Friday and it's the month of MAY! Both of those things are very good things in my book. Today I'm linking up with  Andrea  and  Erika  to share some favorites from the week.  On Monday I shared that we had a busy weekend! My mom and I hosted a Bridal Shower for my sweet cousin Caitlin, and then our new niece and nephew were baptized on Sunday. It was a fun (but tiring) way to spend the weekend!  Jack especially loved all of the family time, and was happy to sneak in some giggles with Great Grandma before the shower began. 😉 We whipped up these  Burrito Bowls  for dinner one night this week, and it was a new favorite. It was such an easy meal that Dustin and I both loved!  It's May, which means that it's time for me to read "Charlotte's Web" to my class. I read it every year during the month of May! This book has seen much better years - I think it's time for a new copy. Haha.  The boys and I love to play in the basement...
