Chicken and Corn Chowder

 

Creamy Chicken Corn Chowder

Serves: 6-8 Cook Time: 6-8 Hours


I live for recipes I can place in the slow cooker in the morning, let cook all day, and come home after school to dinner almost ready. There's nothing quite like walking into your house after a busy day to the comforting smell of dinner. This is a creamy chowder that just requires a few cans to be opened, some chicken to be shredded before serving and some garnishes to be prepared. I hope your family enjoys this soup all through cozy season!

Ingredients: 

1 lb of boneless, skinless chicken breasts

2 cans of creamed corn 

1 can of cream of chicken soup (I use low-fat)

1 can of diced green chilis

1 cup of chicken stock 

1 tsp garlic powder

1 tsp onion powder

Salt and Pepper

1 package of cream cheese

2 cups fresh or frozen corn 

Shredded cheese, sour cream, shredded cheddar cheese, green onion and bacon to garnish

Directions:

1. Place chicken breasts in bottom of a slow cooker. Cover with cans of creamed corn, cream of chicken soup, green chilis, chicken stock, garlic powder, salt and pepper, and block of cream cheese. 

2. Cook on low for 6-8 hours. 

3. Shred chicken before serving, and mix in fresh or frozen corn kernels. Allow to heat through. 

4. Serve in bowls and top with garnishes.

Friday Favorites [10-4-2024]

Happy, HAPPY Friday!  I hate to even say it outloud, but Jack slept through the night two nights in a row this week. He's been getting so many teeth - all at the same time for about three weeks. This led to lots of broken nights of sleep for our boy. It is AMAZING how much better I feel getting a full night of sleep. The Brisel family is OFF!

I'm so excited to share that our family is celebrating the holiday season at our very favorite place...Disney World! This trip has been a long time coming. We have been saving and planning for over a year, and yesterday we [yes we...Santa doesn't get credit for this one 😉] surprised our boys with a trip to Disney World for their Christmas gift. Disney World: Day 5 Recap

Rest days are a necessity for any Disney vacation, no matter the length of your trip. 😉 We have been pushing it and hoofing it all over Disney World, so we were overdue! Our plans today included a character breakfast with Minnie and her friends, spending time at the pool, and a character dinner at 1900 Park Fare.  Both boys slept in until 7:00 which was amazing! We got dressed and ready and began our way towards Cape May Cafe located at The Beach Club Resort. We took the Skyliner from our resort to the International Gateway at Epcot. From there, we had about a 5 minute walk to our restaurant. Super easy!  This character meal is one of the lesser known options for character dining. We've done character dining at Topolino's Terrace (amazing!), Tusker House and Chef Mickey's, so we were excited to try something different.
